- We challenged resident Bon Appétit supertaster and test kitchen director Chris Morocco to recreate Maangchi's Budae Jjigae, sometimes also known as Army base Stew or Korean Army Stew. The catch? He'll have to use each of his senses - other than sight. Does Chris have what it takes to recognize and reproduce this Korean-American fusion of flavors?

This was Chris’ greatest win. The fact that he got as close as he did was insane
It wasn't insane. It was remarkable and extraordinary. Insane amounts to people hearing voices or thinking people are out to get you or hurting yourself, for example. What he did was fantastic, not insane.

Oh c‘mon he DEFINITELY deserved an A, this is the craziest recipe they’ve ever given him and he got almost 98% of the ingredients! I can’t tell if BA is trying to torture us or him 😅

that's not how it works...you don't get scored easier b/c it's a harder dish...it's just more of a triumph to get a B on a difficult dish. He missed cabbage, American cheese, pork belly in the broth, soy sauce, salt and sugar. There were a total of 26 ingredients in the 3 components; he missed 6. So he actually missed 23% of them if all weighed equally. "98% of the ingredients" is an emotion. this is math. We can still feel impressed that he did so well given the sheer # of ingredients and components and difficulty of the techniques without complaining about how he was scored. Chris likes a challenge and he did great on this one.
Man the fact that he got everything except the American Cheese and the Dried Shiitakes in the first round is pretty insane.
and was still given an 86%, like that's three-five ingredients, he deserved a higher score!
This ruined the whole anticipation for the first round for me 😭 god damned impatience to look at the comments
he also missed the soy sauce, the sausage and the cabbage in the first round

That second guessing when he was handed a clay pot MADE IN JAPAN had me laughing. You can almost see the internal turmoil in his eyes.
You deserve a higher score. You did amazing and your instincts was right. I mean you got spam and baked beans. You got GLASS NOODLES 😮. YOU ARE LEGEND
Agreed, the ingredients score of 88 was pretty harsh, should have been in the 90's there, and appearance should have been a little higher also.

Spam and baked beans are VERY distinctive. those were the easiest ingredients
Chris deserved way higher than that score. That judging was a little harsh considering he nailed almost every ingredient. The technique I get would be a little tougher since there are so many elements, but Chris definitely deserved a little higher score.
I'm afraid I'm going to have to disagree just because I'm pretty sure Chris made Korean food for this series before and also had points taken off for being too western with the cooking technique. Korean stews are kind of "throw everything in and wait" and I was really startled when he started cooking the pork first, the noodles separately, and garnishing on top etc etc...
I’m gonna go, there should be an effort score added in based on the difficulty. That’s 9 out of 10 yellow tassels.
Based on the complexity and difficulty of this dish, I give Chris 95%.
This was likely one of the more difficult recipes to recreate given its truly cross-culture inspiration. Amazing. A well-earned B. Did I mention, I'm so glad to see Kat in a real role. She's been around in the background for YEARS.
She has a made-for-camera personality and would love to see her and Harold get their own show.
Having watched many of the scenarios where they give Chris unfair mixes of stuff, along with having had had Budae Jjigae many times myself, he a) CRUSHED this in a truly unbelievable way and b) did not get a score he deserved (it should have been much higher).

This is probably my favorite episode of this series, Chris blew this one out of the water! Deserved an A for sure for getting like 35/40 ingredients correct, that is just mind boggling! These series makes me so happy I get so excited when I see a new episode is up

@@pinkwatermelon8089 not really, adding garlic to a different section is a double whammy of deductions, so it does looks like the grading was unfair but it's justified.
@@pinkwatermelon8089 I kind of agree that he deserved 90% for the ingredients, but if we are being precise he got 17 out of 21 ingredients (not considering the extras that he added), which would be 81%.

Chris did an amazing job, and I think it’s important to recognise that based on the scoring criteria, the score is fair. Technique wise he cooked most of the elements separately (including adding stock progressively, and cooked the noodles separately) whilst the actual dish is assembled, then simmered, and not cooked separately (as is common in western dishes, which he was acknowledging in the outro). It’s not “wrong”, it’s just not what the recipe called for and is part of the fun of the series!
BTW, it's not "miso" It's mejukaru. Mejukaru is made very differently than miso. It's hung out to dry in the sun and rotated to being with rice mats to dry slowly, then ground. It's the base that usually makes soy sauce, but it skips that step.
Miso isn't made that way. Miso is made through brine fermentation with Aspergillus oryzae, with wet beans, then put into a brine.
The smell and flavor are different. The smell of Mejukaru ends up more dry and nutty.
But the smell of miso is distinctly fermented, and mild with higher notes in the nose.
I make soy sauce... and have done it for South China, North China (two kinds), Korean (all different kinds), and Japan's version. I swear they all taste and smell different.
Chris has INSANE talent!!! This was a super hard dish to recreate and for him to almost get ALL the ingredients is crazy impressive

For the amount of ingredients in this dish I feel that Chris did outstanding. I really thought he was going to get the cabbage on the 2nd try. 😄

He has made created quite a few recipes… so I don’t think it’s as obvious as y’all are saying. It’s not like recognizing your handwriting… it’s like having 20 different chocolate chip cookies placed in front of you and asking which one your mom made. As long as it’s not a super unique recipe, most of the dishes taste similar enough that he likely wouldn’t notice, but that’s just my take

First of all Chris, you are amazing! You palette is like no other. Your ingredients were spot on....I mean really. Ok. the technique was a little off, however, everything was spot on. I really think you could have gotten a higher score on this. You are a joy to watch, can't wait for the next show.
I like this series because even mistakes sort of educate about what individual ingredients contribute to a dish. The fact that mushroom could be mistaken for canned seafood, for example.
I miss him going shopping. That part was fun to watch. Please bring it back.
Wow talk about an impossible task? I wonder if any of the new BA chefs could reproduce this without a recipe even if they could see it and knew what it was. Chris has an amazing palate and this series is my favourite by far.

always blown away by not only the fact he can distinguish all those flavors individually, but the knowledge of what they are. i couldn't name half those ingredients even if i was looking right at them.
Buddae Jjigae is the most delicious Frankenstein concoction ever to exist I'm so impressed how well he did getting all those ingredients particularly considering the stew format. It's kind of unfortunate he didn't know the methodology of Korean stews particularly the ones you eat in a restaurant setting or he would have had this in the bag.
I really like it when someone tastes it prior to the finished product. Chris nailed this one

The crazy thing about American cheese, it is actually very common in Korean noodle dishes. I think the idea was, once he got the spam and baked beans, he would consider American cheese (if he knew that was a thing).
I don't think I've ever seen Chris just ENJOY one of his mystery dishes this much. He just wanted to eat it xD And he should've gotten 90+ on the ingredients. My jaw dropped at that huge list of checkboxes.
I'm very impressed... for a non korean to know so many of the ingredients... feel like there were definitely some help here! Maybe it's the not going to supermarket himself... and just going to their pantry with all these ingredients in there already.

Wait, it’s 2022 and you haven’t heard of Korean Army Base Stew? Totally missed the American Cheese, too. The broth looked good. I cheered when you ID’d the pork belly, dried shiitake and the Polish sausage. I’d rather have Maangchi’s, but I’d eat yours and enjoy it!

Out of all of the dishes he has done, this is the one I want to try the most. I can imagine how good it was
I really liked the scoring of kat. Compared to other she was a bit more focused on Details and I think this is what this series is about. I mean it feels only good to get something like the baked beans if other things he left out are considered in the scoring.
