To me the hardest part is the planning. You have to know where everything is going to go BEFORE you even start the physical build. Sure there might be some 'wiggle' room.. but the main plan takes a real visionary.
The Oldest dog on top of the earth pile supervising, king of the hill.... and that thick new bed, your daughter works hard taking care of the flock and it is really nice to have a comfy bed to drop into after the day is done.... So many breaks in the wall sections to do each tier !!!! AMAZING work of Art as it stands.... Good thing you are stabilizing the work before heading out on the road to do the workshops..... Oh, and I love the Kitty's, they really add that element of lived in to the construction site.....

If you would build a form and build the bottle brick windows and strap them together you could set them in place and not have to worry about getting your current forms out.

Bryce Canyon and Zion National Parks are a short distance from Kanab; well worth the time and drive. My Dad worked at both, Bryce Canyon for 17 years and Zion for 14; his job required him to live inside the Parks, they were amazing places to grow up.

I guess it is winter there so all the trees look a bit sad. What time of year do you get the most of your rains. Here we get rain all year round. We'll swap you some. :) Keep well.
We did a Berm and Swale update at the end of our last monsoon season: ua-cam.com/video/JfXGFNIYqaU/v-deo.html They're doing good, but yes trees loose their leaves in the winter. Will be back in the spring. We mostly get rain in summer and some in winter.
@ I was just thinking that all the other walls have some form of interlocking with other walls to keep them in place, but the buttresses don't. Nothing is keeping the end of those buttresses from moving other then weight, which is alot granted, but that's all. By driving a rebar spike down thru, possible even into the ground underneath, the bottom 6 or 8 rows it might help with additional stability. Just a thought.

@4:12 - what is natural latex? Never seen any latex trees.
Natural latex is produced from raw latex harvested from rubber trees. Synthetic latex is man-made from petroleum.

Would break the compression compromising the structural integrity
I would think that would have needed to happen on the first level before it was tamped in place & tamping around a rear piece would be a PitA.
