Every place referenced in this is out of business and the restaurant group dissolved. What a public bloodbath. Even the neighbors in his building from Pizza Loves Emily was sued for defrauding their investors. Someone might say dough wasn't all Talde learned.
Mike uses the adjective "clean" to describe flavors way way way too frequently. It conveys nothing to the viewer and begins to great after a while. Could as easily call the flavors "left-handed." Neither adjective means anything in a culinary context.
