Both Max and I love this creamy and super simple cauliflower soup! What’s your go-to easy winter recipe?
15 minute garlic soup:
A whole garlic (6-7 cloves is a must), a generous spoon of good quality red paprika powder, vegan cooking cream, sprinkle of oil + salt and pepper to taste.
Peel and chrush up the garlic and add it to a pot of boiling water. Add a teaspoon of oil to the water and sprinkle your paprika powder on top. Add any cute bite-sized shape of pasta. Add a generous amount of salt and pepper and boil the soup until the pasta is done. At the end add a good amount of cooking cream and taste the soup if the salt is enough (it should be nice and salty).
I love this soup because it’s super fast and it warms up your heart and soul on a cold winter night. Plus the ingredients are cheap and usually already found in any pantry.
I make two that I really like lately, one is a Creamy Hungarian Mushroom soup and the other a Spiced Tomato Coconut soup :)
Just made your white bean and Kale soup. And for a change I followed the exact recipe with all the same ingredients, instead of just ‘ winging it’ . Its my new go to now, perfect for this snowy evening
Curried red lentil soup. Parsnip and pear soup. Mayo Clinic veggie soup: no oil, good for the tummy and the waist line! (Although I imagine that a tablespoon of oil in the 8 cups it makes would be just fine; they're just sticklers!)

I agree. I'm not against meat but I find it heavy and hard to digest so end up naturally avoiding frequently. I love recipes like this because they are easy to fortify by adding for example several tablespoons of collagen/gelatin to significantly increase it's protein and health benefits while not tasting it or changing the consistency. And most importantly remaining a easy recipe.
Yeah, a lot of recipes bother me because they use oddly specific ingredients 😅
I made this for dinner last night: it is an amazing soup! I didn't have the fresh herbs on hand, so I used dried Rosemary and dried Thyme instead. I put 3/4 teaspoon of each + a bay leaf. That tasted like a good amount. I think you could go up to 1 teaspoon of each, and it would taste great. Adding the lemon zest, red pepper flakes, and olive oil added greatly to the soup. I would make this soup again. It's easy to make, and I like easier recipes.

Used the soup recipe as a sauce and layered Lasagna noodle, yellow squash and zucchini with a bit of Mozzarella. absolutely delicious!

I learned recently Cauliflower stems (and leaves) are totally edible and can be easily incorporated soups (and other dishes). At most may have to peel the outer skin if tough. Sharing because I was happy to learn it myself.

I never thought of freezing the herbs in olive oil. Great tip. I just made some cauliflower leek cheddar cheese soup that’s kind of bland. Those last three ingredients should pep it up. Yours looks yummy!

Hi, I made this last night. It is perfection in a bowl! I didn't have yeast powder, so put a little cumin powder instead. Worked well. I only used half a cauliflower just to try the recipe, but will defo use the other half to make it again! And, also tastes good the next day cos often reheated cauli can be bitter. Thank you!
