This is a food tutorial demonstrating how to make KETO tortillas based on the recipe featured in the Bacon & Butter cookbook. The tortillas only require two main ingredients, plus salt and pepper.
The tortillas were so easy to make and turned out sturdy, soft, and pliable. You probably wouldn't guess that these low-carb wraps are made with cauliflower because you can't taste it in the end product. @@NamasteTexas - Oh no! This recipe is very sensitive in relation to temperature, duration of baking (e.g., 9 mins side one and 5 + 1/2 mins side two), or the wraps will fall apart. Also, make sure to remove excess water from the riced cauliflower before adding the egg mixture, super important.

I have no oven
I have never tried making them in a skillet, so I'm not sure, sorry. The tortillas need to be flipped to finish the baking process, and I don't know if it can become sturdy enough in a skillet to flip without breaking.

@@Edithjaneth85 - Sure. If the vegan egg is gelatinous enough, it should bind. Make sure to cook on side one for 9.5 mins and side two for 5.5 minutes. :)

I wouldn't recommend it just because I haven't tried it. But if you try it and it works, please let us know. :)
Macros make no sense. You can’t put in 2 eggs and only get 50 calories out.

Great recipe. Great video and editing too, just the audio could be a lot more subtle and more melodic with almost no beats or no beats at all. This audio is distracting at least for me to watch the video. Alright, thank you again for the great recipe.

Because the E Book download is no longer available, not having exact measurements for the cauliflower is too inexact to be useful. Cauliflower heads are quite different in size. Could you please give a weight before cooking to make it a bit easier? Thank you.

You'll want to have about 750g of riced cauliflower before squeezing out the liquid and adding the eggs, salt and pepper.

This recipe is a crumbly mess... I mean what are you supposed to do when they even stick to parchment paper?
Really? I found that has happened when either I use a larger head of cauliflower or don’t ring out the “rice” enough. Also, if I don’t leave them in in for 10 minutes, cool for five, then flip and finish cooking, they may not turn out as shown.
Why did you bake cauliflower in microwave after grinding? Not clear.
I don’t bake anything in the microwave. I microwave the cauliflower rice to soften it and then ring out the water.
Then form and bake tortillas. That’s the way the recipe is made.

baking a cauliflower pizza right now (bought the crust at costco) but definitely going to try this recipe to make wraps (I have 2 huge cauliflowers in my fridge taking too much space). I have never made these on the stove top. I don't think they would hold up with that method, or at least I can't confirm.

How do you do it so the tortilla doesn’t stick to the parchment paper? I have done them twice and the tortillas stick to the paper and break easily.
isa Godinez make sure it’s not wax paper. I was going crazy wondering why everything was sticking to my “parchment paper”. Lol
I use non-stick spray in addition to parchment paper. Also, make sure you cook the first side for 10 mins. at 375 degrees F, then let them cool about five minutes before flipping and cooking again for 5 1/2 minutes.

That’s per the suggestion of the original recipe. But the gag is, I have never gotten the same sized head of cauliflower twice! 😆
It’s about 800g cauliflower florets or 3 cups drained cauliflower rice.

I made these and followed the directions per this video, but all six cracked in the middle. They were tasty, but not sure how to prevent them from doing that.
You may have needed to remove more liquid from the cauliflower rice, or the eggs you're using may have been smaller and they could have needed a bit more to bind them together. Adding an extra egg white could help keep them together. The consistency of the mix should be slightly wet but not runny.
Also, the size of your cauliflower head, that you used 3/4 of, could vary in weight. The amount of cauliflower rice needed is about 750g.

How many ounces of cauliflower is that? I have a couple bags of cauliflower florets that I bought that I would like to use before going and buying another head of cauliflower.
The recipe calls for a medium to large head of flour, or around 700g of florets.
How much carb in one bread?

If you freeze them between parchment paper in air-tight sealed bags they should be OK.
Maybe with one egg it wouldn't be as hard to cook on a pan...They would hold...You think?

I have tried it using the Flavor God, sriracha seasoning and it was great!
I wonder if we could bring the calorie count down even further by replacing eggs with 1 tsp psyllium husk powder + 1 tbsp water. At least would add even more fiber. This is a great idea, thanks for sharing this

I do not use microwaves so else can i heat up cauliflower ? In oven? Plus how can u profess to be a welmess video and use a microwave which nukes all goodness out of everything!
You could heat the riced cauliflower in a pan on the stove to remove the moisture, but I would think that would be obvious to someone on the food-police squad such as yourself. I plan to get an air-fryer oven that can warm food quickly soon, but special needs life as a single parent is far from a perfect process. Wellness is a process and a journey.
Plus, making a helpful suggestion from a place of caring and helping would be great, but your nasty and judgemental attitude seeped through instead. Maybe you nuked YOUR food too long and it damaged your empathy or effective communication skills.

What do you mean? It’s the riced cauliflower with excess moisture removed, two eggs, and salt and pepper to make the batter.
I just spread the batter out to form the tortillas-nothing else. 🙂

I have only made these in the oven. I also let the tortillas cool for a few minutes in between flipping them to help them hold up. Definitely make these in the oven.

I seal mine with a FoodSaver, so that helps. I also separate the tortillas with parchment paper. Thye should last for at least four days sealed.

Go with 375 degrees F, or the tortilla will not cook at the right temp to hold together and brown at the right rates.

I would bake them first before frying them, but they do fry well once baked. :)

You could use another moderate-to-fine mesh strainer of any kind. I also have fine mesh bags that I use when making infused oils and use that too.
