      Would not recommend since it gets really soft (wattery) at room temp. Check out the fruit ganache recipe (for macarons, but it's perfect for bonbons too) here on my channel.

    Nice! Thanks for the video. How do you avoid whipping the cold cream you add at the end when emulsifying with the stand mixer? I always wend up with whipped cream instead of a smooth liquid.

      I don't do anything special. There is alot of liquid (with the milk/fruit pure, melted chocolate, etc) so the chance of whipping the cream is minimal. And you don't need to mix to much...
