I run an Irish pub and learned quite a bit from these videos. I now know how to instruct my cooks to make bacon, amongst many other types of cuts, for when the annual pig roast that we sponsor comes around! I particularly like how you show that virtually every part has a use: an important thing for a private food service establishment to consider :) To the immature folks commenting on this video, this is where your meat comes from. If you don't eat meat, then why are you watching this? Grow up

Would like to know of a video that provide guidance for sharpening that boning knife. The curves of that blade I find difficult to sharpen and now I just don't use it. Thanks
what farm do you recommend purchasing a half pig from in the portland oregon area? we went through a farm in camby. not happy. meat is good but the butcher took a lot of the fat/skin. trotters and lard. not going to say any names. i am just looking for a half pig that looks like yours. that i can butcher myself. by the way i love your video. great job.

a firmer grip, less likely to slip I guess, given it's a thick piece of meat. plus it looks like it allows you to cut with more force than if she held it the other way
Awesome, any change you could make a video how to cut it traditionally into Boston butt? There are no Boston butts in my country, so I'm interested in cutting my own from quarter of a pork :-)
Wow, I love this chick! Why does this have so many dislikes? This is how your food is made (except the factory slaughterhouses are way filthier... and the butcher for that matter). All of you whining vegetarians need to google the word "omnivore" and realize that you are one. Human tooth patterns prove that we are made to eat both meat and vegetables. Choose not to eat meat, thats fine but don't bash this woman for teaching us what our ancestors did on a daily basis for centuries.
These 3 videos are great thank you for your time to post this. If people do not appreciate the idea of eating meat or if this video is to nasty for you to watch don't you have made the choice not to enjoy the available resources. For the person who pointed out it take our resources to feed these animals in that case I will not eat any soy burger to make up for the more enjoyable steak thank you very much
Watched the first 2mins, almost jumping out of my chair at the complete lack of knife handling skills. yes the woman can cut it up, but she will end up doing some serious harm to herself in the future if she continues to bone like that. she's already cut her finger by the looks of things!
@TheRelkaw, I'm a butcher and I was actually impressed by her knife handling skills. You'd be surprised how often we will hold a knife in the "dagger" position to separate primals. Knife work in butchery is a totally different animal from culinary knife work, I know this for a fact as I was a professional cook before I was a butcher.
@@SeanHd00d Ive been a factory deboner for the last 13 years, all around the world. I'm all too familiar with how a knife is held in that position and how to use one. I still think she's a danger to herself and should be wearing the correct PPE. Cheers!
Its funny how the professional butchers are slamming Ms. Davis for her lack of experience, and how she isn't a professional butcher, however, I haven't seen even one of the so called "professional" butchers on this forum who possesses the skills this woman has. Where's YOUR video? It's obvious that she's got butchering skills as evidenced by the fact that at the end of the video, she has a beautiful pile of pig meat, in addition to the fact that she knows how to cook the beast as well. ALSO, her presentation skills are great, and I've not seen any of the critical butchers with the presentation skills this woman has (with the exception of Scott Rea on his UA-cam channel). She is what I would call the "total package". As far as the vegans who are slamming her...just change the channel and go find a tofu processing channel. They do exist. For those folks who don't eat pork for religious reasons, again, just change the channel. Nobody gives a damn about your silly dietary prohibitions.

It's much more constructive to present a structured rebuttal or alternative, OR, the often ignored option, just not say anything if you don't have anything good to say. Also, the vegans can go evangelize to the kind people who don't appreciate the work that is done to provide their food instead of harassing butchers and farmers.
vegetarian diets consist primarily of fruits, vegetables &whole grains, whole wheat bread, &brown rice. Lentils, beans, nuts& seeds make up the protein-rich portion of veg diets. meat substitutes such as tofu, textured veg protein& soy burgers r allowed. whole grains, beans, nuts, seeds, lentils =high in fiber. Fruits& vegetables contain fiber too, while meat& dairy contain none. Fiber in the vegetarian diet helps regulate digestion so things don't move too fast/ too slowly through the body.
This is awesome. In my opinion, if you can't stomach butchering the kind of animal you actually eat on a regular basis, then you shouldn't eat meat. One huge problem in our culture is how disconnected we from our food. People actually enjoy having their heads in the sand when they go to the grocery store and buy all these pre-packaged animal parts without having to think about where it came from, what it originally looked like, what kind of food it ate, how it was prepared, etc. very sad indeed.

Ditto on the cutting glove - about to do a shoulder and will definitely be using a glove. Shldn't do a youtube w/a bandage on! - Altho I am not criticizing her basic technique. Nothing wrong w/leaving skin on if you're doing certain roasts - we Chinese would always try to us w/skin on.
Same in Britain. We usually score the skin when oven roasting, then salt it and blast at high heat at the end to puff up the skin into crackling. Not sure why Americans don't do this so much, its definitely one of the best bits
I saw a dude use a chain saw to cut off a pigs head while it was running on its side in his garage with a tarp on the floor and after he cut the pigs head off it was still running.. This was on 4chan.

There are a number of knife sharpening videos on UA-cam. I've found some of them to be useful.
It's cheaper to buy the mean like this if you know how to clean it...I'm not ready yet, I freaked out making jumbo crab legs
