- Hey loves! Because it’s finally almost christmas, today we’re making these adorable christmas tree cupcakes :) They’re really simple (and fun!) to make, so definitely make sure to try them out. A moist vanilla cupcake marbled with red and green, topped with a sugar cone iced with the fluffiest ermine frosting, this recipe is perfect to make for a christmas dinner. As with all of my videos, the full recipe can be found here in the description box along with all the measurements required to produce the recipe. In this video, I use a french inspired frosting on the cupcakes; I will be posting the video for the recipe as soon as possible so check it out if you want to try it! Any type of frosting would work perfectly, but this has to be my personal favorite frosting because of the texture as well as the fact that it has less sugar than your typical american buttercream frosting. Vanilla Cupcake Recipe

Ingredients:
1 ¼ cups (163g) all-purpose flour
1 ¼ tsp baking powder
¼ tsp salt
6 tbsp (84g) unsalted butter, room temperature
¾ cup (155g) sugar
2 tbsp (30ml) vegetable oil
1 ½ tsp vanilla extract
2 large eggs
½ cup + 2 tbsp (150ml) milk
Instructions:
Preheat oven to 350 F (180 C) and line a cupcake pan with liners
Combine the dry ingredients (flour, baking powder and salt) in a medium bowl and set aside
Add the butter, sugar, oil and vanilla extract to a large bowl with a mixer and beat for 3-4 minutes, or until light and fluffy
Add the eggs in one at a time and scrape down the bowls as needed
Add in half the dry ingredients and mix until combined
Gradually add in the milk and mix.
Add the rest of the dry ingredients and mix until smooth and well combined. Do not overmix
Bake for 15-18 minutes or until a toothpick inserted in the center and it comes out clean.
Christmas Tree Cupcakes:
Ingredients:
-1 vanilla cake mix + listed ingredients on the box (or you could use the recipe above!)
-12 sugar cones
-red and green food coloring
For the frosting:
-1 cup unsalted butter at room temperature
-1 cup granulated sugar
-1 cup milk
-1 tsp vanilla extract
-4 tbsp all purpose flour
-pinch of salt
-green food coloring
-m&ms (optional)
-powdered sugar (optional)
For the cupcakes:
Prepare the cake batter according to the instructions and line a cupcake pan with 12 cupcake liners
Divide the batter equally into three bowls.
In the first bowl, add the red food coloring. Add green food coloring in another bowl. Do not color the third bowl
Add in each color of batter into all of the cupcake liners, one spoonful at a time. Fill each one around ¾ of the way
Take a toothpick and lightly swirl the batter, taking care not to overdo it or else the colors will mix and the batter will turn into an unpleasant color
Bake according to the instructions, about 14-17 minutes or until a toothpick comes out clean when inserted
Allow the cupcakes to cool completely before frosting.
For the frosting:
In a medium saucepan,combine the flour, sugar and salt.
Add the vanilla and milk and turn the flame on medium heat.
Stir the mixture constantly until it reaches a boil.
Cook for an additional 2 minutes, or until the mixture thickens up into a pudding-like consistency
Remove from the heat and transfer to a bowl. Place a layer of plastic wrap on top, making sure that the plastic is touching the mixture so that it doesn’t form a skin and cool to room temperature
Cream the butter using an electric mixer until pale and fluffy
Add in the cooled mixture one spoonful at a time until completely combined. Whip the frosting until the consistency is fluffy and light.
Assemble the cupcakes:
Add ¼ of the frosting into a piping bag fitted with a round tip.
Tint the remaining frosting with the green food coloring. Add a small amount of brown food coloring for a slightly darker pigment
Pipe a circle of frosting around the rim of each of the cooled cupcakes
Place a sugar cone face down on each cupcake
Transfer the rest of the frosting into a piping bag fitted with a number 30 star tip.Pipe a dollop of the frosting around the sugar cone, starting at the bottom and then work your way to the top.
Repeat with the rest of the cupcakes and add any additional toppings if desired to decorate the trees
Dust with powdered sugar if desired and enjoy!
