Traditionally prepared in winters, this dish is made with the goodness of jaggery, rice, and milk, and it’s loaded with essential nutrients, making it not just a treat, but also a comforting food for the soul.

Ingredients:
Before diving into the cooking process, let’s check out the ingredients you’ll need:
Rice (preferably basmati): ½ cup
Full Cream Milk: 4 cups
Jaggery (Gud): ½ cup, grated or chopped into pieces
Ghee: 2 tablespoons
Cardamom Pods: 4-5, crushed (for aroma)
Cashews: 8-10 (for crunch)
Almonds: 8-10 (sliced)
Raisins: 8-10 (optional but adds a nice sweetness)
Saffron Strands: 5-6 (optional, but it gives a beautiful color and fragrance)
Water: 2 cups
Sugar (optional): 1-2 tablespoons (if you prefer your dessert a bit sweeter)
Pinch of Salt (to balance the sweetness)
These are the basic ingredients, and if you'd like, you can customize them by adding your favorite nuts or fruits. This dish is so versatile that you can experiment with different toppings and flavors!
Step-by-Step Recipe:
Preparing the Rice: Begin by washing the rice thoroughly to remove excess starch. Once washed, soak the rice in water for about 20-30 minutes to make it cook faster and more evenly. After soaking, drain the water from the rice and set it aside.
Boiling the Milk: In a heavy-bottomed pan, pour in the milk and place it on medium heat. Let the milk come to a boil, stirring occasionally to prevent it from sticking to the bottom of the pan. The milk will start to reduce and thicken, which is exactly what we want for a creamy texture in the Khir.
Cooking the Rice: Once the milk has started boiling, add the soaked and drained rice to the milk. Stir well, making sure the rice is submerged in the milk. Reduce the heat to low and let the rice cook gently in the milk. Stir occasionally to avoid burning, and cook the rice for about 20 minutes or until it’s soft and tender. If the milk evaporates too quickly, add a little water to keep the consistency thick but not dry.
Adding Jaggery and Ghee: While the rice is cooking, let’s prepare the jaggery. Cut the jaggery into small pieces or grate it.
