Nice technique. I'm wondering though: what if you use the same method for the KFC style broasted chicken? I think it would produce similar results. A little tidbit: frying the chicken on low temperature actually makes the chicken absorb less oil. But how come the chicken is oily when you fry it at low temperature? It's because the chicken doesn't absorb the oil that's there on the surface! Meaning that, at higher temperature, the oil on the surface gets absorbed inside the chicken as soon as you take it out - hence it absorbs more oil, while appearing less oily on the surface. I saw this experiment being done by Kenji at SeriousEats. This doesn't change the results though, just an interesting tidbit.
