Ingredients:
Set A
1 kilo chicken, cut into serving pieces
4 tbsps fish sauce
Set B
1/3 cup cooking oil
2 cloves garlic, minced
1 small onion, minced
Pinch crushed red pepper flakes
1/4 cup pickle juice
200 grams tomato sauce
2 pieces dill pickle or pickle relish, chopped
Cracked black pepper, to taste

This is a staple dish in Marikina. When I make this dish, I use both sweet pickle relish and sweet pickle slices. I would also add vienna sausage. Yummy!

Hi,in marikina we make pork sa pickles,marinate sabaw ng pickles and pickles,onion,garlic,pepper.lagyan rin ng chrizo de bilbao,tomato sauce,sausage,bell pepper.
Also add pork liver or chicken liver
That's our favorite food na lagi niluluto ng nanay ko. Yung version nya may hotdog at patatas.

We cook that in Binangonan. We use pickle relish instead. Try adding bell pepper, calamansi, carrots and a dash of spanish paprika 👌

My brother use to cook it during our fiesta here in tondo. He called it chicken carioca. Pickles, potatoes, carrots is the only vegetables he put, just the same he will saute the chicken in garlic onion tomato sauce and chorizo de bilbao then add some Nestle cream before its completely cooked.
A staple in Liliw, Laguna during fiesta or any other family celebrations.
They cook different sa liliw like may chicken liver & picle relish use nila..kaya meals a.potatoes added

Chicken Pickle or Achari Chicken

total time: 2 HOURS 55 MINUTES
Chicken Pickle is typically served in a paratha, it is heady with garlic and ginger and a wonderful astringent flavour.
Ingredients
500 g (17.5 oz)Chicken Thighs
1 Tbsp Chili Flakes
1 Tsp Coarse Sea Salt
1 Tsp Ground Turmeric
100 g (3.5 oz) Ginger
15 Cloves Garlic
150 g (5.25 oz) Onion
1/2 Tsp Fenugreek Seeds
1 1/2 Tsp Mustard Seeds
1 1/2 Tsp Fennel Seeds
1 Tsp Garam Masala
300 ml (10 fl oz) Cooking Oil
1/8 tsp Asafoetida
150 ml (5 fl oz) )Cider Vinegar
Instructions
Cut the chicken thighs into strips around 5mm in profile and 5cm long.
Peel and slice the 5 of the cloves of garlic as thinly as possible.
Peel and cut half of the ginger into batons as thinly as you can.
Add the chilli, salt, turmeric ginger and garlic to the chicken and mix thoroughly and allow to marinade for 1 hour.
Cut the onion in half and then peel and slice into 2-3mm thick half-moon shapes.
Mince the remaining garlic cloves and grate the remaining ginger.
Heat the mustard, fennel and fenugreek seeds in a dry pan until they become fragrant.
Grind the seeds in a spice grinder or pestle and mortar and mix with the garam masala and set aside.
Heat the oil in a LARGE deep heavy-based pan until hot but not smoking.
Add the onions and cook for 10-15 minutes until a deep golden brown, stirring occasionally.
When cooked remove with a slotted spoon and set aside.
Into the same oil batch fry the chicken for 3-4 minutes, be careful with hot oil if the chicken is a little wet it will spit.
Remove each batch of chicken and set it aside with the onions.
Add in the asafoetida and the spice mix we set aside in step 6 to the oil.
Then add the garlic and ginger and fry for 2-3 minutes.
Remove from the heat and allow to cool for 10 minutes.
Very carefully pour in the vinegar, if the oil starts to spit it is too hot and allow to cool a little further.
Then add in the chicken and onions we set aside earlier and return to the heat and cook for 4-5 minutes.

One of my favorite childhood dish in Liliw Laguna . We used relished pickles instead. It is cooked the same way as adobo.

Masarap to pag may Carrots and Potatoes and MORE Pickles, fresh and relish combined preferred ko. Add a half or 1/4 lemon or calamansi para sa asim (depends on your taste), and then a very little amount of Soy sauce and Green peas for color. We eat it in Pasig, very uncommon sa mga Karenderya pero sa tahanan pak na pak. Hope to see a remake of this recipe Chef Tatung, you'll gonna love this even more

Grew up eating this dish. My mom called it chicken in pickled sauce. Almost the same ingredients but no chilli. It is more of sweet chicken dish.

@@percivalfeliciano9587 Pareho lang po ang sangkap sa kadalasang adobo. Idadagdag ninyo lang ang katas at likido ng pickles sa marinade na toyo, suka, at bawang at idadagdag ang pickle relish kapag malapit nang lumambot ang karne. Ram pickle relish po ang gamitin para matamis.

My Lola cooked this but added hotdogs and small chunks of pork. Pickle relish ang gamit nya. Tastes tangy, sweet-ish and salty.
