    VIDEO SUMMARY:
    In today's vlog, I share my 'keeping balance' routine that helps me stay productive. I also share recipes for pancakes (thin version called crepes) and pineapple soup. Both recipes are below.

    THINK PANCAKES (CREPES) RECIPE - timestamp 03:41
    Ingredients:
    Makes 4 pancakes on a 26cm frying pan.
    250ml milk or water (I use water)
    1 egg
    150g flour
    a pinch of salt if you like
    The batter should be on the watery side.
    How to make it:
    Mix all the ingredients well. Fry the pancakes in a hot pan with a little oil (I use coconut or olive oil) for 2-3 minutes on each side or until golden.

    TOMATO SOUP WITH CHICKPEAS AND PINEAPPLE RECIPE - timestamp 09:08
    Ingredients:
    700 g fresh small tomatoes (I used 2 cans of peeled tomatoes in their own juice, 1 can = 400 g)
    2 tablespoons of coconut oil
    1/2 fresh pineapple
    1/2 teaspoon of cinnamon
    a pinch of curry
    1 teaspoon of tomato puree
    1 liter of vegetable broth
    1 can of chickpeas
    salt, pepper
    3 tablespoons of almond flakes
    How to make it:
    1. Cut the tomatoes crosswise from the bottom, put them in a bowl, and pour boiling water over them. Peel them.
    2. Cut the cleaned pineapple and tomatoes into cubes.
    3. Melt the coconut oil in a pot, add pineapple, cinnamon, curry, and tomato puree, and simmer everything for a few minutes.
    4. Add the tomatoes and simmer for another few minutes.
    5. Pour the vegetable broth over everything and add the drained chickpeas. 6. Cook for about 10 minutes until the tomatoes fall apart.
    7. Season with salt and pepper.
    Serving:
    Roast the almond flakes in a dry, hot pan and add them to a portion of the soup before serving.
