Hey! I’m a subscriber of your channel from China. I don’t know if you can see this but I really want to give you some my advice about your trip especially on eating. There are basically 4 things I want to talk about. 1. If you want to get a proper experience of the local cuisine, it’s probably not a good idea to look for them in the street food zone. I can see how much you love the street food, but it is acknowledged and agreed by all Chinese people that street food in every city across China are basically the SAME. It seems like they are all “copy&paste”, that means no matter which city you go you can always find those same food in those cities’ street food zones, so they cannot stand for any local cuisines but just something to fill the belly when you walk. I’m not saying they are not delicious, sometimes they are excellent. But they just can’t perform you the right and whole picture of what the local food should be like when you come to a new region. It’ll be way much better if you go to a local restaurant. 2. How to find a proper and nice restaurant? The best way is surely to have local friends to guide you to the right place, and maybe order food for you. If you don’t have such local friends, why not just ask a random local guy on the street or whatever, ask him(her) what restaurant that he recommends that can represent that region’s cuisine. You can ask multiple guys if you want. It’s interesting to ask different people and see if the answers are the same isn’t it! Once you get to the place and not so sure about what to order, just ask the waiter/waitress what’s their famous specialties. And all the communications above can be smoothly done by a translator APP. I don’t know what APP are you currently using but it seems that it has failed several times, so maybe you need a better one. You can try Apple’s translator from App Store on your iPhone. (All the 2 subjects above are like in general, there’re still 2 things next are more specific.) 3. When it comes to Chinese hot pot, it’s always hard to avoid talking about 海底捞. The logo of it is just “Hi” and the full name in English is Haidilao Hot Pot. It has branches in almost every city, so you can find it in any city you visit. About this Haidilao hot pot, I can say if you ask any random guy from anywhere in China about what’s the best hot pot restaurant, the answer may be various but Haidilao is always in the top 3 options. It may not be the best option for someone, but it is always a standard option for high quality hot pot and everything in it never goes wrong. Last thing about flavor, instead of the spicy Mala flavor, the tomato flavor is also widely loved in China. Maybe it could also be a nice option for you. 4. If you go to Beijing someday, you probably want to try the Beijing duck. The best and most decent option is always 大董Da-Dong, but it can be very expensive there for a meal. There are still some nice and less expensive options such as 全聚德Quan-Ju-De and 四季民福Si-Ji-Min-Fu, choose whichever you like. Have a nice trip in China!

Finally, my hometown! It has been changed a lot since I left 24 years ago. It was much quiet before and there were less tourists during my childhood time. Glad more and more people realize how beautify this city is !!!
I’m from shanghai, 24 years ago i spend some weekend every year in the west lake, just sitting there is good enough when you think about the history…from Tang, Song to RoC, each inch of length on the DuDi or BaiDi tells you thick stories of the Chinese history.
I was in Hangzhou 20 days ago. I'm so happy that you managed to visit this amazingly beautiful city as well. Marco Polo wrote in his book that Hangzhou is the most beautiful place on Earth and he was right. When I first arrived at the lake, it was around 8 in the evening, and the area around the lake was all lit with colorful lights. It was so beautiful that I broke down and cried. And the people are so kind and friendly. The modern part of the city is also stunningly beautiful, especially the "balcony" by the river. I felt so at peace there. Lotus roots are good for hot pot. It’s one of the few only crispy vegetables. Actually I can’t think of another vegetable as crispy as lotus roots. Btw, I hope you have asked for a change to a room with windows.

Also,Hangzhou is known for food desert of China, it's very hard get good food for good price. Famous chain resturants open in Hangzhou always modified the taste in a plain way.
羹 (gaang) is a soup finished off with starch to thicken it, it's usually quite pretty where you can see the bits through the glassy clear soup. 粉絲(fen si) is what you'd call glass noodles overseas, made with legume starch and it's got a slight spring to it and it's characteristically clear and transparent. If it's slightly tinted grey or brown it's made from potato or sweet potato and they'll call it 粉條(fen tiau)

In fact, lotus root is categorized into crisp and sticky-soft; the crispy ones will taste harder but have a better texture and are usually used for deep-frying and smothering. The soft ones are more flavorful and are usually used in soups or for specific dishes (like the ones you had this time). By the way, lotus root is not sweet, the reason you guys taste like sweet potatoes is because of the sugar added during the cooking process
The subtistite showing Beef G. "G" is just a kind of soup, but the texture is more thick because added corn starch/potato starch, that's why not watery. We have a specific name for the texture called as "G" :)

My Chinese sister in law, lives in Hangzhou and if you want to spend a couple of hours luxury in Hangzhou, she treated us to afternoon tea at the Shangri La hotel, where they had a couple playing piano and singing classic Western songs-from Sinatra and nat King Cole etc, plus cucumber snadwiches and 3 tier cake stands, scones and tea. You can go to Leifeng Tower in Hangzhou, which has a beautiful legend and a beautiful love story.

羹 (gaang) is a soup finished off with starch to thicken it, it's usually quite pretty where you can see the bits through the glassy clear soup. 粉絲(fen si) is what you'd call glass noodles overseas, made with legume starch and it's got a slight spring to it and it's characteristically clear and transparent. If it's slightly tinted grey or brown it's made from potato or sweet potato and they'll call it 粉條(fen tiau)
I have never been to Hangzhou before, China is soooo big and soooo many cities😂😂but I had meals with family at Grandma's Home restaurant before in Fuzhou City, a nice restaurant 👍👍
In fact, lotus root is categorized into crisp and sticky-soft; the crispy ones will taste harder but have a better texture and are usually used for deep-frying and smothering.
The soft ones are more flavorful and are usually used in soups or for specific dishes (like the ones you had this time).
By the way, lotus root is not sweet, the reason you guys taste like sweet potatoes is because of the sugar added during the cooking process
