It's pretty hard to get proper braking done with heel and toe, some rather focus on the braking first. Nothing bad about that

In endurance racing and other longer duration racing it's not nearly as important. Typically ou're not trying to wring every 10th out of the car all the time so you don't have to run the risk of cocking it up and blowing a braking zone or hurting the engine or even using unnecessary fuel. In time attack and short sprints it's well worth the risk though.
