If you coat it really well with epoxy, YES

Polyester resin is cheap asf tho it’s like 10$ for a liter pretty sure it’s not 100% water proof tho just very water resistant, also if you are using epoxy anyway you might as well use some fiberglass, atleast on the bottom for better scratch protection
