Leather stripping! That's what you should call it. That's basically what you're doing, the plastic is sticking to the first layer of the hide and stripping it off when you peel. (:

I think peeling up the outer leather probably reduces the longevity of it, which is probably why it's not a common technique. That top layer that you're removing is called the grain. So, maybe, hot degraining or selective degraining?
The other decent answer I've seen is calling it a form of excoriating, and that makes sense since leather originates from skin. But what we care about when crafting with leather is that this is the grain we are removing, and that has specific results and issues. So your name is the most useful.

great video, you should try recycling old project fails into multicolored filament. I don't know if this would work but if it did it would look super cool, and be a great re-cycle
I'm a touch confused, didn't he do the triangles in the middle the opposite way? The last one is dark and the first two are light in the logo, but in the bag it's the other way around..? Still looks amazing though!
I've seen a technique similar to what you are doing at something instead of hot plastic they used string and glue to rip off the first layer of the leather
The lightened effect seems like you're sort of "delaminating" the leather, removing the topmost treated layer of leather to expose the lighter raw material underneath. So, leather delaminating/delamination?
one thing that would be really helpful is to use sewing chalk or erasable pens. Most frixion pens are made to be removed with heat so me and my mom use them to mark our sewing projects. once we iron them or in your case use a heat gun the marks will disappear and you will have crisp clean lines.

Devin the technique your using is called leather pyrography.
it is of the same technique with wood pyrography where you burn some parts of a leather or wood to create charred patterns.
