  • I show how to make schnitzel. I used pork tenderloin as the meat but various other meats can be used to make it, such as veal, mutton, chicken, beef, or turkey.

    Whatever meat you are using it is prepared the same way. Many people associate Schnitzel with Wiener schnitzel. “Wiener schnitzel” is actually a geographically protected term in Germany and Austria and can only be made with veal. The only difference is German Schnitzel is made with pork instead of veal. Schnitzel is traditionally served with Spätzle and gravy, Pommes (fries), or Kartoffelsalat (German vinegar-based potato salad). Additionally, it’s usually served with a leafy green salad. It is pretty easy to make and only requires a few basic ingredients.
    A schnitzel is a boneless meat, thinned with a meat tenderizer, coated with flour, beaten eggs, and breadcrumbs, and then fried. A popular food in many countries, it is made from veal, mutton, chicken, beef, turkey, or pork.
    Ingredients: The amount of each will depend on how much you make.
    - Meat (veal, mutton, chicken, beef, turkey, or pork)
    - Egg

    Jesus. Lmao. I’ve been making “breaded boneless pork” for years, this exact way. I didn’t know it was Schnitzel. I do the same with beef liver except I soak it in milk for 6 hours in the fridge. GREAT video. Thank you!!!

    Have you ever thought about cutting the meat accros the grain so it just falls apart when you bite into it so it mekes it even more enjoyable to eat.

    Over all a good receipe . But u dont use paprica on a german Schnitzel ! And in my opinion the Foil is useless. But Thats only my opinion . Im from Bavaria ..

      The origin of the Schnitzel is not really proven. Even if it comes from Austria, there may have been the Cotoletta from Milano before. Also meat had been covered and fried in bread crumbs before in many places and different cultures. To me it doesnt matter. Schnitzel is Schnitzel.

    Hey guys, comment from Austria here, the place that stole the idea for Schnitzel from the Italians centuries ago. The way I do it, I don´t put plastic foil on top of it or below, i just put the meat on the cutting board and work the meat with the "teeth" of my meat mallet. That way you crush the fibers and muscles that connect the meat and make it real tender. Do one side thoroughly without crushing the meat up into pieces, turn around and do it again, turn around and see how it looks, probably do it again. That way, your meat can´t get stiff when you fry it. Works with pretty much any meat pretty much every time. (be extra careful with chicken as it´s really easily broken into pieces with a mallet)
    Also, don´t use paprika when making a schnitzel. Hungarians might do that, but it´s not a wiener schnitzel if you do. (it´s only a proper wiener schnitzel if you use veil, but who gives a fuck, everyone around here uses pork for their schnitzel, so that´s just as proper for a genuine austrian style schnitzel)
    For seasoning I actually just use salt, no pepper, nothing else. A schnitzel is really about the taste of the mate, the meat being tender as fuck and the crust being perfectly crunchy, not dry, not soggy. How to do that is pretty much down to experience with the heat of your oil and length of frying + the way you make your crust.

      Mom used to use Veal and then switched to tenderloin pork, but yes, also do not use plastic layers (likely because ancestors rarely had a bunch of plastic around kitchen, so learned it the basic way as it does seem to tenderize the fibers better).
      I always need to make the basic potato salad that goes with it - boil russet (absorbs oil/vinegar well) or even red skin peeled potatoes, transfer cooked potatoes into a single layer in a serving glass rectangular pan (my preference) while hot and gently make slices with a knife without disturbing the potatoes too much as you want slices. Broken bits taste good too, but slices look nicer.
      Very finely chop green onions and sprinkle over sliced potatoes, mix 2 parts oil (I still use something like vegetable or canola) and 1 part white vinegar and shake in a closed container (can quickly make more and add if you don't have enough) so it becomes whiteish and blended and pour over the sliced potatoes while they are still hot or warm (can make this mix while potatoes are cooking). Lastly sprinkle salt and I use freshly ground white pepper over top to taste. Can also add tiny crumpled bacon bits or not. Wait 5+ minutes for the vinegar/oil to be absorbed by potatoes. You have poured the right amount over if there is hardly any oil/vinegar left in the bottom of your serving dish. How something so simple can taste so good is amazing! Yummy warm or cold.

    Here in Indiana in the US, our official sandwich is the pork tenderloin sandwich which the same exact thing as wienerschnitzel but instead of serving it with lemon, we put it on a Kaiser roll bun with pickles and mustard. Gotta love german heritage!

    Pretty good Schnitzel demo - thanks. May I suggest you invest in a decent knife for cutting anything - a medium cook’s knife is most versatile. May I also suggest that 2-3 minutes per side is way too long even with pork. With veal even less time.

    This was originally done with veal scallopini in Milan.When the Austrian Kaiser visited he liked it so much he asked the court chef to make it for him.The chef used pork filet and the Wiener Schnitzel was born.Since then it has travelled around the world where it is called a Milanese.

    I make with mashed potatoes and brown gravy, served with a veggie. I also like Apple sauce on top of the veal. Traditional snitzel is usually mashed and gravy. I like green beans as a side myself. Good video, but some pieces were too big, easier cooking smaller pieces. That's just me!

And i lerndnit pretty much the ssme way, but just without paprika and pepper, apart from that is it pretty much on point!     Schnitzel is delicious. The Bavarians serve it with a brown gravy and potato dumplings that are to die for. I've tried every way in the book to replicate those dumplings, but I just can't make them like the Germans can.

    The best Schnitzel is really thin veal meat wich is breaded and fried in butter...and it is never ever served with spätzle. Only with potato salad, green and cucumber salad, or possibly with fries. Some like to eat it with cranberries. ( jam ). This is the original wiener schnitzel. The pork schnitzel is made same way.
    There is a variation called Jägerschitzel wich is served with mushroom sauce. This could possibly served with spätzle because of the sauce.

    if you want to make your schnitzel healthier instead of frying it , wrap it with aluminum foil and put it in the oven or a toaster in 15-25 minutes it would be cooked crispy without the annoying oily texture.

    I was born in Vienna, Austria where the Schnitzel originates from and live in Munich, Germany which is the 2nd Schnitzel capitol of the world.
    In both cities paprika is not used and instead of veggie oil, clarified butter is used.
    Other than that, perfect.

    For breadcrumbs try using pulverized corn flakes, it's my favorite. I'm willing to bet using some honey frosted cereal as breading and glazing with a bourbon barbecue sauce would be great. I also smoke pot all the time, which cancels out my previous claims.

    You don't need to beat the meat at all. And here in Europe (except maybe for Britain) we do not use plastic foil extensively - just thinking of all plastic waste floating in the oceans. You do not put paprika on fried Schnitzels with breadcrumbs either. You only use it if you are preparing a "Paprikaschnitzel", but that's a different dish.

Go to a tesco or sainsburys and you’ll see bananas wrapped in styrofoam and plastic and peeled oranges in plastic containers. It’s disgraceful....     Hi, what cut if meat did you use?
    Also I dont usually coat the meat with flour just the egg then breadcrumbs.
    How important is it to use the fliour ?

      Can't remember the cut of meat. Flour is commonly used to coat schnitzel before frying to create a crispy, golden crust. However, some variations use alternatives like almond flour or just breadcrumbs so it doesn't really matter.

    I made my own after having one at a supposed real German restaurant while eating there group after group of elderly German's came to eat and all of them left when they saw the prices. Mine was 15.95 I hadn't had anything that day so was very hungry. I was not impressed, and could see why almost 40 people total of all those who came over the full hour and a half. I don't rush eating ever. I made some today but no eggs. baked a little then fried in butter. I find the reading channels annoying between the music and pacing it's hard for a person of my intellect being able to keep up. Thank you.

      They had 4 cutlet's already pounded for 4.45 for the set that's I think a little more reasonable.
