Just not really Ethiopia or Eritrea, this mostly has to do with climate since Ethiopia and Eritrea have a differnet climate zone. Plantains are originally from Southeast Asia, and thats a tropical area, plantains only really thrive in tropical/sub-tropical climates like Kenya, Tanzania, alot of West African countries, and the Caribbean.
As a Kenyan I can tell you Plantain is not a common food. It's not common in most East and Southern African. Not saying you won't find it if you look for it but most people would not have interacted with it. I would say it's mostly a West African delicacy.
