    Looks beautiful 🥰 My only suggestion is to mix salt and water before pouring the brine in, because shaking the jar may get the spices to go up to the surface, and floating spices often get mouldy.
    I'll be making mine on Thursday, when the beets are delivered. Can't wait 😊

    i thought they required partial cooking before peeling and jarring?
    everything ive googled has said that

      A fermented food is never cooked, it will kill all the good bacteria you want.

    Will these produce crunchy beets? Like the kind at zancou chicken? Or the kind served in Mediterranean food. Not soft soggy beets.

      Typically I do about 7 days. If your house is on the warmer side could take 3-5 days. If you have A/C it could take up to 10 days. You can always do a taste test to see how you like it 😃 if you like it then stop the ferment by placing it in the refrigerator. Thanks for watching!

      I would assume they last 6-12 months, but mine never last that long :)

    Any issues if we shred them instead of cutting into cubes.?

    How long do we leave it on the countertop

      Depends on the temperature of your house. With the AC running I check and taste it at about the 2 week mark. If I didn’t have AC I would check at the 1 week mark.

      @@JoyOfJamie You should use PH testing strips, ideally it should be under 4.6 to kill of any bad bacteria, but 4 is the mark i use. You can keep it going, the lower it gets it will become more sour, it depends on the individuals taste. But 4 is easy and safe. They are as cheap as. 😍

    How much salt to your water?

      I usually add about 1 1/2 tsp per pint jar and about 3 1/2 tsp per quart jar.

      The anglos have something called "pickling spice" which is just a blend. There are various recipes of "pickling spice" online, just find one you like and blend your own.
