    As a kid and teenager I loved cooking over a fire.. As I got older I seemed to no longer have the time to do it.. After watching this and a couple of other videos I reckon its time to make the time and teach something to my kids. Thanks Harry. Ads or no ads. It doesn't bother me, your content is worth watching. Keep it up.

    A tip for the bearnise : whisk the egg yolk and your (strained) reduction over heat until its light and fluffy and increased in volume. Take it off the heat then slowley add the butter whilst whisking season and finish with fresh chopped tarragon.

    Just do the ads, I think UA-camrs make too much of a fuss about being pure and turning down ads. Most people expect it now, and understand you need to pay bills. In my opinion its about the expectation you set early with your audience. If you talk up purity and no ads, its hard to change later, but if you run ads from early on, the audience understands and accepts it. People love Linus Tech Tips, and he is plugging ads and merch, and sponsored videos constantly. Main thing is to be careful about mixing sponsored and editorial content. The irony of running unrelated VPN ads, is you cant be accused of selling out or being a hypocrite regarding the adventure products you use.

      @@firetofork I think that's half the challenge is getting offers for products you actually believe in. Otherwise people see straight through it and get over it quick. If you believe in the products though, i say go for it. You've set up a channel that people have trusted which goes a long way. Might i also suggest mentioning more about other ways in the back end of youtube that can help your channel eg. you mentioned turning off ad blockers, does playing ads all the way through help more rather than skipping, likes, comments etc. Everyone asks for people to "click the like button and subscribe" without explaining how this can benefit your channel. Just some things to consider. If people understand why they may be more willing to resist the skip button etc. Love the channel and hope the patreon thing is beneficial.

    fark i love bearnaise and tarragon for that matter, its a overlooked herb. To stop bearnaise from splitting it needs to be kept warmish (in working kitchens we try and find the perfect spot where it will stay, not to hot not to cold).
    if it does split beyond using you can always re emulsify it using more yolks and water and the split bearnaise as the butter

    I watched an old pommie fella recently who reckoned he had the best roast potatoes recipe. He put a level teaspoon of bicarbonate soda in the pot when the potatoes were boiling. He said it makes all the difference. They looked pretty good after they were cooked. I’ll be trying it next time we have a roast.

    Perhaps if you run a fire competition for australia only, dont run it during summer. Save that for winter when there are no fire bans for the most part through out the country.

    Whisk your sabayon more until ribbon stage before adding the butter mate, will help prevent your sauce splitting. As always amazing stuff

    Once your bearnaise is done you can put it in thermos type container to hold temp, as when it cools it may split when reheating.

    You should use an s shaped hook to hang shit from your tripod chain instead of wrapping it around the handle, make it a little less clunky taking shit on and off

    Shut the front door, $190 that’s some mark-up. Local producers tend to get $2.00 to $4.00 a kg for local beef (although not wagyu). Retail margins are nut"s,.

      Add on auction fees, slaughterhouse, middle man, packaging and then retailer. Basically double at each of those and you get to about supermarket prices. Obviously better quality meat gets a premium.
