I get having trouble finding interesting stuff to narrate, but I'm personally invested in the Great Bug Empire by now. I'd like to see where it goes.
If making more videos on it is annoying I understand stopping though.

Stellaris does have this problem that by the time you've reached the top and the rest of the galaxy can't stop you, there is still like 50 years of gameplay remaining. Still, I would like to see you reach the endgame spoilers, but uhhh, you are still about 50 to 100 years away from it.

Since interesting events are slowing down and becoming rarer, you could record the rest of the campaign without regularly uploading episodes. And then once the campaign is finished, compile and release all the highlights as a finale to the series. Of course, I have no idea how much storage all that footage would take up, or whether that editing and (reduced) commentary would even be worth putting the effort into. Just an idea.

The war goal and claims systems are really unintuitive/not something a player would understand without external resources, while at the same time being boringly simple, hope one of the updates being worked on this year completely reworks it. Until then, claims really don't do as much as you'd hope they would, they're mostly used for priority when multiple parties could take a system, or to take some systems when subjugating.
