    "ancient town lottery" that actually sounds like a fun way to explore the off beaten path. Chinese friends always say those villages are all the same but like your last shot - you can still encounter some breath taking scene

      many of them do feel the same after being over-commercialized but some of the ones that are far away from the city outskirts have their own unique character, fortunately this one I stayed at was one of those 😆

    The dried bamboo's texture is really a torture. But the flavour is supposed to be concentrated in dried foods. So, umami?
    P.S. Also I like to rehydrate dried foods when doing instant noodles. I rehydrated beef jerky and it was great! I imagine redydrating the dried bamboo in instant noodles might be a good idea. Such dried bamboo, outside of being snacks, would have been widely used to cook 腌笃鲜 outside of bamboo season in this region (Shanghai and southern Jiangsu included) before fridge and refrigerating (talking about the supply chain of foods) was common (and affordable) .

    Katherine, don’t ever assume anything. In China two cities 10 miles apart can be entirely different. Hangzhou and Shaoxing each has its own cultural identity. It takes some time to explain but I’m sure you will know eventually as you are set to live there for a while.

    looking forward to ningbo. that's my home town but i havent been back in over 5 years. also i remember eating the dried bamboo (or something like that) as a kid but it was always used in cooking or after it has been soaked in hot water. eating it uncooked sounds like an intense jaw workout.

    I suggest to try dried squid or cod some time (a bit fishier aroma than bamboo shoots or other dried sweet treats). It is an acquired taste which you may become accustomed to or dislike entirely. Similar texture. 👍

    Dried bamboo shoot sort of remind me of (narwhal) muktuk I had in Nunavut. The fats were like top-notch otoro sashimi and were really good, but the skin sandwiched in between...was just fishy-tasting rubber. The Inuits would chew on for hours to soften it - which seemed like task impossible too me. Had to take the short cut and just swallowed it.

    Katherine, another great video about your bike trip, but very little about your job which is ok.
    What would make your video more informative is info on the place you stay, the cost, and other bits of useful information for would-be travelers who might be considering following in your footsteps. Very few mentions where they stay or where other would-be travelers can stay and what it would cost them.

      I thought about doing that but I put a ton of effort into creating these routes using a satellite map so I get on as many small village roads as possible , so it’s not like if you show up at one of these cities with a bike and just Google map your way to the adjacent city , you will get a comparable experience . It would be very hard for anyone to replicate because there is so much planning and also luck (who i encounter, what happens) that goes into it

In terms of diet, you can introduce Western cuisine. And Chinese cuisine suitable for foreigners.     Unfortunately all the China bashing and lies about China from the US have left a very unfavorable impression on anything related to the US. It is ironic because the Chinese once admired the US. Even the translation of the US is "beautiful country" in Chinese characters.
    But you radiate with them because you live in their midst and care enough to learn and speak their language. That is why many have commented how beautiful you are. I believe their expression goes beyond complimenting your physical beauty but they recognize the light in your countenance.

    其实不管是英语或华语,经常因一句无关痛痒的好话,怎么听起来就莫名奇妙的变成贬意了呢 ? 比如说: "你为什么在这?"。 刻意计较的话好像就有点.....呵呵,对方或许会暗地反问道 : "咋了,我不受欢迎吗?" 如果我们换一个方式问道 : "什么风把一个像你这样的大好人给吹了过来呀? "。 如果您能够在发问时把浓眉大眼咪起来那就更好了。大半人当面对迷人的双眼时他们的抵抗力极差.....呵呵呵。

      Those dry stuffs are not for 'eating' per se. They are basically, 'chewing gum' in the West.
      Many "snacks" are like that : keep you busy, without 'over eating'

    To be fair, both China and USA are ensuring almost 100% negative media coverage about each other and you can see these funny and blunt reaction from grassroots after stating where you are from😂 the guy at the end was running his brain full speed to be polite and finally came up with some compliment about USA hahaha

      16年之前中国都是说美国好,从特朗普开始加关税开始就不说美国的好了。其实不是关税的原因,主要是美国对中国开始敌对,我们不可能还把它当成友好国家吧。

      China is merely reporting on what the Disunited States is trying to do with their containment policy. You need to be on the receiving end to realise it. How can it be both sides are running 100% negative media coverage. The one of the locals even opined that it is a rich country and for your information, the Chinese word for the Disunited States is "beautiful country." (美國)

      I don't know ensuring is one thing but generating negative news is a different thing. What China reports on US like homelessness, gun shooting, etc. are real. Many US farms use illegal cheap labors from Mexico and Latin America. They don't report but they rather want to report on 95% mechanicalized cotton industry as force labor and cultural genocide. There is only one native American TV channel in the entire US and it is in English. My understanding China has a news channel in their own language in their own region.

    If you are doing the entire tour on a bike, maybe have someone sponsor you a properly fitted road/gravel bike. That folding bike is very inefficient for long rides. A properly fitted bike with drop bars will distribute your body weight among hands, butts and legs and is much less tiring for long rides.

    解释一下:这种笋干在浙江是当作零食吃的,一般是用退笋做的,有咸的也有微甜的,有些会加水煮花生米有些会加水煮黄豆,很有嚼劲,对欧美人来说不适合,他们咬不动。
