i can repair and restaurate it within 3h too - but without timelapse - but with safety shoes and not destroying the planet ^^

How about we show them a work bench.
Several decades ago, I had the same job, repairing large horsepower motors. Although the technique of removing the copper from the stator varied from the video the job was essentially the same. Sandblasting the stator to clean it was a lot less violent to the metal than using a grinder. I suppose that these days the whole job is done by automation.
Not to sure about shorting the laminations together with a spot welder, sort of makes coating the laminations a waste of time to stop eddy currents. I generally ground out any shorts with a burr. 🤷♂

The direction is determined by the positive and negative lugs. 3 phase 2x1 .... change one single positive to a negative by switching them.
This a demonstration of how to create value things from discarded scrap.
There is no place on earth would a motor that sized NOT be rewound and restored to service.

THE FIRST THING TO DO BEFORE STRIPPING THE MOTOR COILS IS TO CHECK THE CONNECTIONS THEN STRIP THE WINDINGS ,UNLESS THEY HAVE WOUND THE MOTOR BEFORE AND KNOW THE WINDING CONNECTIONS ,WHEN I WOUND MOTORS YEARS AGO THAT WAS THE FIRST THING TO DO

Yep. You noticed the arc damage to the laminations too. At 50 Hz, a few layers shorted together will not have excessive heating from Eddy currents. It could be the owner permitted higher currents to avoid "nuisance tripping. "

Some of those motors are housed at the bottom of a container and only have access to the front shaft.

People in different parts of the world have different ways to do things; this guy is a real mechanic
He's working out of his home. He gets what he needs. He's used to working like that.
BTW: I note how he often used his bare feet to help "adjust" the windings.
