Sweet Sesame Fritters (Asabe Zainab)

Recipe:
2 cups flour
1 cup fine durum semolina
1/4 cup sugar
1 tablespoon cornstarch
1/4 cup sesame seeds lightly toasted
1 teaspoon cardamom ground
2 tablespoons anise seed ground
1/2 teaspoon salt
1 teaspoon Mahlab
1/2 teaspoon grated nutmeg
1/2 teaspoon baking powder
1 teaspoon vanilla
1 tablespoon orange blossom water
1/4 cup olive oil
1/4 cup clarified butter( pure samneh)
1 cup warm milk ( added gradually)
Sesame seeds lightly toasted to garnish
Simple syrup:
2 cups sugar
1 cup water
Juice of half a lemon
Mix together in a saucepan.
Bring to boil.
Leave to simmer on medium heat for 10 mins to thicken slightly.
Remove and let cook completely before immersing the Fritters.

Looks yummy! What would you suggest substituting for the ground seeds (mahlub?)??
You can substitute with a 1/4 tsp of almond extract (can be added to the milk) or just leave it out entirely
What is Mahlab called in Englis?
It is Mahlab. It could have different spellings. It is native to the Arab world and we have used it in foods for hundreds of years.
It’s the inside kernel of a specific cherry pit (st Lucie)
You can find online or Arab supermarkets. Buy the seeds and ground as needed. Store in freezer.
