Checked the Wiki and it turns out the speed of the song depends on whether you listened to Mettaton’s dialogue pre-battle. It plays at 95% speed if you do, or 97% speed if you skip it.
Im not an expert on the UT OST, but I am an expert on Caretaker stuff, which uses semitones to slow things as opposed to precents (to preserve the tuning), and 1 semitone is 5.613, so 95% is about -1 and 97% is about -0.5, which is probably more accurate, although I haven't looked any further than this, anyway I gotta get up at 8 tmrw gn

The original OST version played for me, and I didn't die once fighting Mettaton EX. Jacksepticeye, for example, played the game, and died fighting Mettaton. First time through, the OST version played, but only after he died did the tempo and pitch change.
Another example, Markiplier recently beat Mettaton, and the original soundtrack version played. After he died the first time, though, this version played. This pitch of the song is only triggered if you die and then come back to fight him again.
The Game tends to mess with the pitch, rarely any gameplay will have the original pitch from the OST. But as i said, the game messes with the tempo, meaning that sometimes the tracks are either faster or slower, that's why some tracks sound different from the OST.
It's actually the opposite. The first time you fight Bowiebot over here, this version of the theme is playing. It's only if you die that the "real" version comes into play thé next time you fight him. At least on the switch it was the case.

in MY opinion, its supposed to be in this order: Piano = Glamour & Style Intense Part = Still glamourous, but intense, this is right before Assy after all Saxaphones = Sass Last Last Part = Intense Sass

That’s exactly how it started for me, the other one is upbeat but I like the deeper chords and bass in this and the clarinet section sounds so beautiful in this pitch.
The reason how I figured out that undertale ost is pitched from in game is because I compared this song by have the real boss fight play in the background and I played the ost version and I noticed that the ost version is slightly higher pitched
