The cuckoo sound is produced by playing several notes of the Jazz-Flute at the same time (see completely at the end at 2:11). Normaly chords are never used when the Jazz-Flute plays (so always one note at the time) as the slightest deviation (out of tone) in one of the notes will make the organ "scream" (awefully out of tone).

The row of pipes behind the Jazz-Flute is called Vibraton and plays, just like the Jazz-Flute, the Melody. Most of the time the Jazz-Flute and the Vibraton play together but these can play individually. When they play together, the Vibraton plays one octave lower than the Jazz-Flute (lenght of the Vibreton pipe is twice as long as the corresponding Jazz-Flute pipe) and the Vibrato is activated so that a slight off-tune on any of the two is not heard.
Vw Taro Ik kan je bevestigen dat dit niet afkomstig is van de Bierhoeve. Ik ben ongeveer 1 jaar geleden nog langsgeweest in de Bierhoeve en toen stond het orgel er nog. Ik heb mijn orgel zo'n 5 jaar geleden aangekocht.
