I found this recipe during Covid home cooking times and till date follow this recipe, really tasty, we eat it with rice as well and the gravy never disappoints, my husband does not like coconut in curries so I don’t add that, and instead of fried onions I add raw onion, I air fry the karela and then follow rest with less amount of olive oil. Hope this helps, thanks!

Hi Ruby aunty! Yesterday I was planing to cook bitter gourd then after few minutes I received a notification of ur bitter gourd recipe. So I decided to follow. My son was continously saying that you know I dont like karelay I wont eat. But when I was almost done he started saying k lag he nahi raha karelay pak rahay hain. Then he said ok I will eat once not again. I made one roti for him and when he finished he was like what ! Have I finished ? And asked me to make more :-)
I wrote all this just to tell everyone that this recipe is amazing and so delicious.

Karela is one if my favorite sabzi. I love the bitter taste so no soaking but I do take out seeds because stuffed karelas are my favorite. And my mom makes dry sabzi with the seeds and skin and that also tastes great.
