I’m guessing the coconut water must’ve been 23 cents a can at Grocery Outlet. Why didn’t you just debone the chicken before cooking, it’s five minutes worth of effort. The chicken looked dry. That dish was screaming for something acidic, as in a can of stewed Italian tomatoes, along with chopped Italian parsley to finish. Wait…you didn’t add garlic? Where’s the bay leaf? Jim…I know you better. Also, your face seems to appear rather swollen here. Have you had lab work done lately, in particular bloodwork and cancer screening? What is your potassium level? If you have high levels of potassium in the blood that would indicate kidney problems and coconut water or any form of coconut should be avoided as it contains high levels of potassium. I’m very concerned for you.
