strawberry and blackberry cobbler:
ingredients:
fruit layer:
400g strawberries, hulled, halved
200g blackberries, halved
3/4 cup brown sugar
1 tsp vanilla extract
zest of 1/2 lemon
juice of 1/2 lemon
cake layer:
3 cups self-raising flour
110g coconut yoghurt
1/3 cup brown sugar
3 vegan eggs (use a premix or use flax eggs)
2/3 cup vegan butter, melted
to serve - vegan oat cream
method:
1. preheat the oven to 180°C. in a baking dish, combine strawberries, blackberries, brown sugar, vanilla, lemon juice and lemon zest.
2. in a blender or mixer, combine flour, coconut yoghurt, brown sugar, vegan eggs and vegan butter until smooth. evenly pour over the top of the fruit layer.
3. place in the oven to bake for 30-35 minutes. serve warm with vegan oat cream.
spinach and ricotta pastries:
ingredients:
4 sheets of vegan puff pastry
sesame seeds, if desired
oat milk, if desired
for the filling:
ricotta:
200g firm tofu
3/4 cup raw cashews, soaked in boiling water for 1 hour and then drained
1/2 cup nutritional yeast
1 tsp onion powder
1 tsp garlic powder
1 tsp veggie stock powder
1 tsp dijon mustard
juice of 1/4 lemon
salt and pepper (to taste)
1 tbsp olive oil
3/4 cup water (+ more to add to get to desired consistency)
spinach mixture:
1 tbsp olive oil
1 brown onion, diced finely
150g frozen spinach
1/4 cup water
method:
1. preheat the oven to 180°c fan-forced. prepare 2 large baking trays with baking paper. remove puff pastry and spinach from the freezer to defrost.
2. add all ricotta ingredients to a food processor or high-powered blender. blend until smooth, adding more water if required.
3. in a small frying pan over medium heat, fry the onion in olive oil until lightly golden. add spinach and water, frying until spinach is completely defrosted. remove from the heat.
4. mix ricotta and spinach mixtures together in a bowl, before evenly dispersing between all puff pastry sheets and rolling up to make pastries.
5. brush with oat milk and top with sesame seeds if desired. place in the oven to cook for 15-20 minutes or until golden.
6. remove from the oven, enjoying warm with sauce if desired.

made the ricotta pockets this morning and they are great and do so well in the air fryer! this is a great meal prep item as well and pairs so well with an iced cacao for an at home cafe experience. thank you for sharing ducky x :)

Yum I need to try some of those snacks!! There were a few I love already - the oat milk chocolate is the BEST and I have a bag of the lollipops (not sour) at my home office desk haha. Adults need lollipops too!
