Re: Gluten. As I have begun growing organic rye in a wheat-producing zone of Chile, I had to learn a good deal about grain farming. I was shocked at the amounts of Round-up growers use in my area (and, as I came to learn, throughout the world). Weed killer is highly toxic and these growers are planting right after spraying. I think that this issue is a major cause of health problems commonly linked to gluten. I was also shocked to see that weed killers are not even necessary, as you can simply walk through field and yank out the few weeds that may appear. If you catch them before they flower and produce more seeds, the problem dies out then and there. If you are a lazy steward paying someone to grow your crops, this will probably never occur. When weed killers were not available, people managed to produce crops and turn a profit. I have a sneaking suspicion that even if weeds worked their way into my crops, production would not be hugely impacted. Rye emits a chemical which stops weed proliferation below the surface. Maybe the people who developed these grains in and and around ancient Israel had this in mind. Hope this info adds to the dialogue. The series is astounding, and of course these two individuals helped to make it so good. Thanks to all involved.
