    Hi Michelle try baking powder for rise. My understanding is bicarb soda makes them light and fluffy. They do look delicious.

    Looks like you used bakers (used for bread etc) plain flour not plain flour which has a higher protein level. Could have effected the rise but still look so yummy! xx

    These banana bread muffins look delicious and healthy 😊💕 possibly self raising flour might help but that’s what I thought the baking powder was for 🤔 like you said, maybe your tins were just bigger than Dani’s. Bet they tasted great anyway 👍🏻 Aww, so nice to see you and Jay together in your video! ☺️

    I love Dani from clean and delicious, she is a lovely positive person and her recipes are usually simple, healthy and delicious. You should follow her UA-cam channel if you are not already. I've been looking for some flour for sometimes now,no luck so far,I still have some but I use alot since I make my own bread at home...so hopefully they restock them here in Brisbane too...BTW,next time if you didnt have flour and wanted banana bread try her other recipe, just search her UA-cam or website for Banana Oatmeal Muffin Cups
    ,its very similar to this one you made,but using oat flour(just make your own in a blender,super easy!)...I love the smell of freshly baked banana bread❤️

      And to me it seems like they needed abit more raising agent, you don't really need self raising flour, just add 1 TSP baking powder for every cup of plain flour(thats basically what self raising flour is)🙂

    Hi Michelle, they look good! You may like to try this recipe which you can find on the Woolworths website, just search 'Healthier Banana Bread.' I made it last week and it's a winner!! So moist. It uses wholemeal SR flour, however, I only had white. It uses only a small amount of maple syrup for the sweetner, and no sugar. I also threw in a small amount of chocolate chips!! Yummo!!

    I love banana bread so will definitely be making these. It’s tricky sometimes when using recipes from other countries (Clean & Delicious is from the USA). Unless recipes stipulates SR or all purpose flour then i qwould presume plain flour.
    I have a muffin pan that makes 12 standard size muffins but also have the larger 6 muffin pans that you used and I think they refer to that size as the Texas Muffin Pan which makes larger muffins so that could explain why they didn’t rise. In the standard size pan they would’ve risen more.

    Goodness, that tablespoon measure is huge. My measure is for 20mls! Also, you used Bicarb soda which is different to baking powder. This could affect the rise.
