Stuffed Potato Cakes - cheesy Goodness! So Delicious!

Ingredients💚 for 6-8 medium size
600 g potato (russet or yellow)
salt to taste
15 g corn starch (for russet potato)
OR 20 g corn starch (for yellow potato)
1 egg yolk (from Large egg)
Filling
200 g champignon mushrooms
100 g spinach
salt, ground black pepper, garlic powder to taste
70-100 g mozzarella cheese
cooking oil
Fry on slow-medium heat for about 4-5 min each side, until beautiful golden colour.
