Just made these today with vanilla ice cream blackberries and walnuts. This is like ridiculously easy and the effect is fabulous. I didn't temper the chocolate Just kept the balls in the freezer until ready to use and they worked perfectly fine. Thanks for the idea!
If something is warm it does emit infrared rays. the "laser thermometer" can detect those and calculate the temperature with them. It's more or less the same approache with infrared cameras.
I've never seen such a wonderfully simple explanation of how to make tempered chocolate like this. It's always seemed too hard so i haven't tried it. Now i will for sure, thank you!
So basically there's no special taste to it, it just looks nice. This recipe is good if you want to impress some house guests, or if you want to make this in a restaurant... But not worth the effort if you're just making it for yourself!
Might be true... But after being around for sometime, you'll realize that the people that are 'worth the effort'...aren't that many... I'd make these fun things with my man.. Something fun V'day/ birthday/just because... Or with your kids..its memories that they'll have for a very long time, not something any other person might put the time for.. Plus its a ball of chocolate...the possibilities are seriously endless..ok I'm hungry now ha.

Lovely show stopper! If I were to make this for a small dinner party how much would you suggest I prep? Just make spheres then assemble desert before serving or make the whole desert and put it in the freezer? Then serve with the hot caramel sauce?
Well I find that this would be fun to do/ watch and some people have a lot of time on their hands so they can do this and not worry about totally destroying it after spending a while to make.

How about doing "Technique Week"? Instead of food recipes, maybe you could show us different knife techniques, how to properly peel various fruits and herbs, etc that give people trouble.
That is great. I think it would be fun to make several and fill them each with something different. Then at the dinner table when you melt the chocolate it would be a surprise for each guest to see what is inside theirs.
I recently had this dessert in a classy restaurant (Mozart) in Lima, Peru. It was one of the best desserts I have ever had! I wanted to duplicate this but was unable to locate the "how to" on making it.......until my wife found your video. Thank you for posting this! I ordered two (2) of the molds and can't wait to make this. I'm known in my Family and among my friends for the desserts that I make. This one will achieve a new tier in my creations.

The point, as stated explicitly in the video, was to put a twist on an ice cream sundae, which often contains caramel and chocolate sauce. Melting the ball and revealing the contents adds theatre, in addition to creating that traditional, dual-sauce component.
I'm just screaming and pulling my hair out as he's pouring the caramel sauce on it! I don't think I would waste all that time to make a ball and just melt it in the end.

OH MY GOD i need to make this! I actually had this once and I was very impressed by the creation. I thought it'd be very difficult to make and only chefs can nail it. You make it look simple and easy to follow. Thanks for the great vid!
Hello Byron, I love your desserts and I tried making this chocolate ball filled with homemade peanut butter ice cream for my husband's birthday. I used the same mold that you have in the link and I had a lot of trouble getting the chocolate out. I tried making it again and sprayed the inside of the mold with nonstick spray and I had the same luck. I'm sure that I have to be doing something wrong here. Do you have any suggestions? I would really like to try to make this dessert again. Thanks so much for your inspiration!
I'm not sure if this has already been addressed, but if the chocolate was tempered, why does it need to be placed in the fridge? Shouldn't tempered chocolate set somewhat quickly at room temperature and not require refrigeration?
Isn't 101°F a wee bit too hot for tempering chocolate? I never really studied officially in a culinary school or anything, but I do have work experience (I work in a confectionery shop) with chocolates. What I learned that one should temper dark chocolate in around 31°C-32½°C, aiming for 32°C (88°F-90½°F in Americanese).
Now that's an EPIC dessert! Well impressed! :)
