When I was working in a foreign country almost 20 years ago, we used to organise a South Indian vegetaraian 'sadya' lunch every year for the festival of 'Onam' which is celebrated in Kerala, India. The traditional Kerala 'sadya' cuisine is predominantly rice-based and is served on fresh banana leaves, which we had arranged as well. One particular year our guests included a few North Indian IT Engineers as well. To my surprise and astonishment, NONE of them were comfortable eating rice with their fingers; all of them asked for some form of cutlery. They said they could easy break bread by one hand, but not the rice, even at their homes back in India. Thought I should share this experience of mine here.
David , we do mix mango with curries like mango dal, mango eggplant curry, mango mutton curry etc. Also we have mango coconut chutney , mango pulihora ( usually pulihora is made with lemon or tamarind but the one made with raw & sour mango is also famous) . Give these a try !

Otherwise called as Man cave:) The floor, bathroom, laundry room, and custom-made huge bookshelfs' are gutted with the rest of the furniture. It's a trilevel- kitchen, living and bedrooms have survived. Struggling to save the barebones of my den from the most feared infestation of mold. Six inches of rain can do phenomenal wonders, the entire town is a fiasco. I believe I got away cheap. A huge thanks David, for bringing the much-needed "Indian" comfort :-)

Tandoor has roots in the Indus valley civilization, not Persia. But North Indian Kebabs etc. have Persian roots as India was ruled by Central Asian Turks(nearly 800 years) who considered Persian as the Islamic high culture and brought it to India in terms of food, architecture etc. Also, most north Indian food items like butter chicken, tikka masala are only a few decades old. Ancient Indians never used too much spice in their food despite India being the home of spices. It was a colonial influence as Europeans who landed in Indian in the early days would put too many spices in their food to show off their wealth(spices were very expensive in those days).
David "Ras" means "nectar or juice" and "Malai" means the condensed or the concentrated milk. So it will be better to call it "Malai Gulab Jamun" or "Malai Jamun" and Gulab means Rose. 🌹 so the choice is yours. 👍🏻

The green chutney has probably mostly cilantro. "Hari Chutney" is Indian which is cilantro based with ginger and lemon and chilies and cumin and hing with a little sugar and salt. For all the Indian food David has eaten, he should know the ingredients better - especially the flavorings - not just the obvious ingredients. People can learn a lot about the flavorings and herbs and spices used by watching the Indian cooking channels. As a side benefit, you learn to make the dishes yourself at home with pure quality ingredients. No need to go to a restaurant or travel to India.
Chutneys are freshly, coarsely ground paste like and used to compensate for heavy food as a digestive or to make up for less salt in our food. They are totaly unprocessed food no additives no preservatives. The pickles have oil and are sun dried so last longer !! Chutneys are consumed in a day or two as they are often tangy yet perishable we have tomato chutney as well as ketchup the way Americans know it !!! Tempered chutneys like coconut chutneys have a splattering of hot mustard seeds and curry leaves and red chillies into a paste of coconut and split lentils ( white lentil, chana daal and sambhar dal )

Pulao is not covered and cooked like biryaani and is somewhat layered with veggies. Pulao does not have saffron and the spicy curry called salaan ( like in Hyderabad).
