- "Taste of Soba" is a short documentary and simply documents the process of making soba noodle by the local chef, Syuji Konishi, in his soba restaurant called Soba-no-mi (手づくり処 そばの実) in Hokkaido, Japan.
Unfortunately, the restaurant closed their history in the end of 2016.
This video was presented in "Sakurasupporten" at So Stockholm in Stockholm, Sweden in 2011.

Nice to see the brief soba making. I'd be curious about the ratio of wheat to buckwheat for this texture, or were they 100% buckwheat ? Nice video. The colour tones are warm and even though it is short and fast-paced it is possible to feel the dedication for the craft.

I'm in the USA, what brands of Soba should I look to purchase in Japanese grocery stores such as Mitsuwa or order online if I want to get an authentic noodle taste? I can't read Kanji but my Kana is fine.
