Cream Cheese 7up Pound Cake
Cake:
2 sticks salted butter, softened
8 Tbs butter flavored shortening
8 oz cream cheese, softened
5 large eggs, room temperature
3 c sugar
3 c cake flour
1 c 7up
1/2 tsp salt
2 Tbs lemon extract
***baking soda was mentioned in the video but it is not required which is why it is not in the recipe. The cake will come out fine without it.
Icing:
1 c powdered sugar + 2 Tbs
2-3 Tbs lemon juice
Drop of vanilla flavor
Instructions
Preheat your oven to 325 degrees Fahrenheit.
In a mixing bowl, add your softened butter, shortening, cream cheese and mix until creamed.
Add in the sugar one cup at at time making sure to scrape down the sides of your bowl periodically.
Add in your room temperature eggs one at a time. (Scrape down the sides)
Alternate your flour and 7-up into your batter until just combined. (Add 1c of flour, then 1/2c 7-up and repeat until your ingredients have been used)
Add in the salt, lemon extract and mix until your batter is smooth (about 10-15
seconds).
DO 👏🏾NOT 👏🏾 OVER 👏🏾 MIX 👏🏾 YOUR 👏🏾 BATTER 👏🏾!!!
Add your batter to a well greased Bundt pan and place in the over for an hour and 25 minutes or until a fork or toothpick comes out clean when you poke it.
Allow your cake to rest in the pan for 10 minutes.
While your cake is resting, add your ingredients for your icing in a small bowl.
Mix until your ingredients are well combined.
Take a plate and place it on top of your Bundt pan and flip.
Allow your cake to cool slightly before adding your icing.
Enjoy!

There’s no baking soda and yes, use 2 tablespoons.
I thought I heard her say baking soda but it’s not listed as an ingredient. Maybe she meant salt.
@@rhondamercado7527 Yes she said that in the video but it wasn't listed as an ingredient in the description so I followed the recipe in the description and it came out lovely everyone loved it but it shrunk quite a bit in my opinion so I think I'm gonna add 1/2 Tsp Baking Powder when I make it again as test run to see but nonetheless it was delicious.

What size is that bundt pan? I have sizes 12 cups and 16 cups. I would love to use the 16-cup one for this. But I'm concerned that there might not be enough batter to fill it.
I believe it is a 9-cup pan.
@@KitchenTrapQueen Thanks for your answer. I'm here just to let you know my experience with your recipe. I just got it outta the oven and it looks great. Unfortunately, I can't cut it open. I want to keep it intact for the cookout tomorrow.
I mentioned before that I wanted to bake it in a 16-cup bundt pan. Well, I did but I made 1-1/2 of your recipe just in case. I figured if you were using a 9-cup pan, I'd have to make more batter so I could at least get enough batter for a 12-cup pan. I realized while the batter was still in the bowl that I'd need more than a 12-cup pan. I just barely had enough room in the 16-cup pan. This whole thing makes me think you used a pan larger than 9 cups.
I did use a little of the optional baking soda. I didn't have 7up on hand so I used ginger ale instead. I forgot the vanilla, but I licked the bowl and the batter was great anyway. Also, because the cake was so huge, I used the cold oven technique so that it would bake slowly thru and thru. The surface of the cake is crunchy and it did sink in the center near the tube, but that's the part that's gonna be face down on the plate. It measures 4-1/2 " tall and 29" around. I'm very proud of it and I can't wait to cut into it. Thanks so much for the recipe.
I don't have butter shortening, would regular shortening work or can it be eliminated?
You can substitute it with regular butter.
