"I'm Brett Weingarth, and I have oyster farms here in Pambula and Merimbula Lakes, and I also run Captain Sponge's Magical Oyster Tours in Pambula. I farm here and I love it. I surf and I fish, and I love the coastline, the beaches, and those rocky escarpments.
When you're coming out here, at 7am in the morning, and you're the only person on the lake, you've got it all to yourself, and it's glass, there's nothing quite like it. Heading down the channel, you see the birds dive, and fish skip out of the way, and past all the oyster leases. We catch little Sydney Rock Oyster 'spats' out in the wild in January, February, March, April, and then we farm them on from there.
The thing that most people don't know about the area is that it's not that cold. We've got a great climate. It's more or less like it's been made for you."
