Ingredients for Boiled Potatoes:
Potatoes (half cut) 4-5
Yellow food color 1 tbsp
Salt 1/4 tsp
Oil 1 tbsp
Water as required
Ingredients for Biryani Masala:
Beef 1 kg
Oil 1/4 cup
Onion fried 2 cups
Tomatoes (chopped) 2 cups
Ginger garlic paste 1 tbsp
Salt 1 tbsp
Red chili powder 1 tbsp
Red chili flakes 1 tbsp
Coriander powder 1 tbsp
Cumin powder 2 tsp
Nutmeg (small) 1 inch
Mace (small) 1 inch
Cinnamon stick 1 inch
Green chilies 3-4
Cloves 10-12
Black peppercorns 1 tsp
Star anise 2-3
Bay leaf 1
Yogurt 1 cup
Water 1 L
Ingredients for Rice Preparation:
Guard Basmati Rice 2 cups
Water (For soaking) as required
Salt 1 tsp
Cloves 8-10
Oil 2 tbsp
Cinnamon stick 1 inch
Ingredients for Assembling:
Tomato slices as required
Lemon slices as required
Mint leaves as required
Coriander leaves as required
Green chilies as required
Fried onion as required
Prepared biryani masala
Boiled rice
Yellow food color 1 tbsp
Directions for Boiled Potatoes:
1. In a pot add water and bring it to boil, add potatoes, salt, oil, food color and let boil until 75% cooked. Strain and set aside.
Directions for Biryani Masala Preparation:
2. In a pot heat oil and add meat, fry for 4-5 minutes or until changes color. Now add ginger garlic paste and mix well. Then add fried onion and cook for 2-3 minutes.
3. Now add tomatoes, salt, red chili powder, chili flakes, coriander powder, cumin seeds, nutmeg, mace, cinnamon stick, cloves, black peppercorns, star anise, bay leaf and cook for 8-10 minutes on high flame.
4. Now add water and bring it to boil. Cover and cook on low medium flame until meat is 85% cooked.
5. Now add yogurt and cook until oil separates. Add green chilies, boiled potatoes and cook for 6-8 minutes. Your masala is ready.
Directions for Rice Preparation:
6. In a bowl add water and soak guard basmati rice. Soak for 25-30 minutes, strain and set aside.
7. In a pot add water and bring it to boil, add soaked rice, bay leaf, salt, cloves, black peppercorns, oil, cinnamon stick and boil until 85% done. Strain and set aside,
Directions for Assembling:
8. In a pot add a layer of masala, boiled rice, tomato slices, masala, fried onion, mint leaves, coriander leaves, green chilies, tomato slices, lemon slices and cover with lid. Steam for 10-15 minutes on low flame.
Preparation time: 10-15 mins
Cooking time: 30-40 mins
