The engine smoke/steam is most likely because it's running lean and getting hot. Your air/fuel gauge is at like 16 when it should be around 14.7. That's also why it pops/backfires when you rev the engine up. Adjust that carburetor fam

You literally play until you hit either 21 or bust, you should only hit if you have a low number(single digits always hit), if its high(such as a 15 or above) then its up to you whether you take the risk of hitting or standing.
