It's a modded version, if you're interested check the above YT description and checkout the Jelly source. It was a pretty enjoyable stream like all Jelly streams.
Most mods for Minecraft just add a bunch of items, new mechanics, customization options, new ore's, items etc. The specific one Jelly played had a popular item that's in a bunch of mods called a chance cube, that can trigger a completely random effect like spawn a bunch of ore, rain lava etc. in essence just spices up regular Minecraft. The character options were just a part of the overall mod she wasn't playing, it wasn't the main point of the stream.
@@luckytanuki5449 From what I can tell the particular mod being shown here changes villagers to be human models instead of testificates, and adds extra interactions in the vein of games like Harvest Moon/Stardew valley. You can get married to NPCs and have children, with said children having a chance to inherit these traits. I think in general the traits also influence gameplay in some capacity? I've never played this mod though so I can't say for sure if they do/to what extent.
