Especially the ones con salsa verde, the salsa is very creamy and smooth and spicy as hell, combined with the softness of the masa, it makes for a bomb ass tamale! I always prefer to buy my tamales from him!

I always think about how different our tamales are. I'm norteña and I've been eating thin, thick and greasy tamales my whole life! We don't put carrots in them! But, when I visited my friends in Mazatlán, their tamales were way too different, even in Toluca and CDMX where they are so big and fluffy. There's so much diversity about just one dish and I think their judgement were based just in their personal experiences, especially Maria and her rajas con chile, I mean, I told my mom and she was like "Who puts carrots if it's a rajas con chile tamale???", But yeah, you get my point
What part of Mexico are these abuelas from?? I've never taste that combination, chicken pepper and carrots. The usual tamales in my state (San Luis Potosi) are chile rojo, picadillo, queso en salsa verde and dulce.

maria was right about not spreading the masa and making it too thick. tamales are hard to make and you can screw them up if you making them too thick or not enough flavor or dont put enough water on the bottom of the pot or let the water dry.

I always think about how different our tamales are. I'm norteña and I've been eating thin, thick and greasy tamales my whole life! We don't put carrots in them! But, when I visited my friends in Mazatlán, their tamales were way too different, even in Toluca and CDMX where they are so big and fluffy. There's so much diversity about just one dish and I think their judgement were based just in their personal experiences, especially Maria and her rajas con chile, I mean, I told my mom and she was like "Who puts carrots if it's a rajas con chile tamale???", But yeah, you get my point
