I like to put white or gold potatoes in the water after boiling chicken and bake some biscuits while the taters cook. Takes me back to days with my Grandmother. She was the best cook ever!!

Awesome! Here in the midwest, many restaurants are frying french fries in lard. They charge $1.50 - $2.50 extra. Definitely worth it every once in a while. Very good taste, etc. 👍 🥔
The best piecrust and biscuit are made with lard- you’re right about frying in lard ,too.
I've had these, but the sweet potatoes were precooked. The people doing it said it is easier to get a complete cook without burning the potatoes. It also takes much less time in the oil. They also used coconut oil. The flavor was amazing. I'm gonna have to try it like this to see which way I like them best! Great video!
I tried coconut oil for cooking and didn't care for it. I use it for my skin. But I grew up in the American south of the 50s and 60s. We used lard for almost everything.

I love lard! I got about a litre of the stuff last year when I made chicharon from skin that my butcher gave me. Everything I fried and cooked in that lard was delicious!
Doc, yes, I eat vegetables. I eat lots of sweet potatoes. Very healthy.

My mother used to cook these in a cast iron skillet. Yummy

Won Ton wrappers. Cut into strips then dressed similarly to your sweet potatoes. Sugar, salt and instead of vanilla...sesame oil. Best crispy chips ever

If I fry, it's in lard. I like to get my lard from a meat processing shop out in the country. Tastes 100 times better than grocery store lard, Chicken (with milk gravy) and pie crust, etc etc.

Doctors have been taught a lot of misinfo. Lard is not the enemy. The FDA is.
Think about it for a minute: If prescriptions drugs worked, you wouldn't need a refill and doctors would put themselves out of business. They don't want us well. They want us dependent on the next visit.
I've eaten like the FDA warns against for 73 years. Stress tests show no blockages in my heart. I take no meds, either script or OTC. I've learned to listen to my own body. I've also come to realize that worry over what we eat harms us long before the food itself. Moderation is also key.

That's from unhealthy oils and too many sugars and carbs. Animal fats don't cause that.

How do you store the used lard, how many times can it be reused and for how long?
Yes, but don't heat it above 360F. (185 C.) It degrades above that temp. It can be kept at room temp or stored in the fridge, where it'll keep for 6 months to a year.

I’ve used lard for fish frys for years. I strain it every time and get up to a dozen cooks out of it. It’s gets dark but has no off flavor and can withstand more heat than oil.
My grandmother made these all the time when I was little but she never peeled them.

This looks wonderful! But I wonder what to do with all that fat (veg oil or lard) afterwards. Can you strain it and keep in the fridge? (My mom would do that with her “french fry” oil and use it again a couple of times and the fry’s were always better using the older oil!) If so, how long?

Lard and other animal fats are much less harmful than seed and vegetable oils.

Yuck! Look up the ingredients listed on a can of Crisco. Nasty stuff! You don't want that in your body.
Why yes, Chris I do mean Crisco. This phone or my fingers are wonky sometimes. AND, yes I know how bad Crisco is, that's why I asked the brand from the professionals. Whew! Glad we took care of that! Now if ya'll have a brand name without corrections l'm ready to hear.
