I could find recipes for how to prepare the gourd when it is not yet ripe but your video was the only one I found that shows how to prepare this fruit when it is ripe and red inside! Now I am going to make a "tomato" sauce from some ripe ones and put it on cooked young gourds, with rice.

I was a completely ignorant of how to process it when it ripened that I actually threw away the seed pulp thinking I only needed the skin. My sister-in-law later looked it up in Google and I was so embarrassed to learn I was throwing away the best part of the crop that gave it its beautiful red colour and taste. After my initial blunder I am now an expert at processing it. (Lolz) We recently harvested about eight large gourds and it nearly filled the pot we used to prepare it. Although we are in the dry season now I have planted more. I will water and tend it until it crops. It is saving us a lot of money we spend buying tomatoes in the market. I have a big bottle full of the seeds I took out and dried to continue to plant and even share with anyone who is interested. My method of processing includes scraping the pale yellow pulp off the skin completely after taking the seeds out of the red pulp.. I then cut the skin into pieces using a pair of scissors. I boil it for a few minutes with appropriate quantity of water to soften it up more before blending. It makes it easier for my blender and gives me a smoother consistency. Perhaps I won't need this method if I have a strong power blender or if I take it out to the neighbourhood miller to grind in their grinding machine like you do. Thanks so much for this video. Actually someone I bought ugwu seeds from in the market just told me to buy the seeds with my remaining change. And it took so long for it to show the tomatoes after planting it. And when it started coming out I was scared that what is this and it was not even Red on time and not all even become red at the same time, so I said I was going to uproot everything that I don't see the use. I just said let me google to know if I can use it green like that and I saw that the green is not edible and I saw your video. So I'm not uprooting again. I will even plant more. We planted this in my compound, we hardly buy tomatoes in the market... we use this for all our cooking although not with the skin. Funny enough we don't even have land or backyard like yours, we plant inside a bucket and still ot gives us more than enough... as I am typing I have harvested 4 tomatoes today alone and more are still growing... Nigerians need to learn to start making use of the resources they have and plant what they will consume in their homes.

@Realatmx Its delicious. Just blend it with other peppers and onions and make it into sauce for rice, yams, etc. using vegetable oil or other favourite cooking oil you prefer.
