  • A bit of fungus foraging. Should be good right now, but It's not been a fantastic year for wild mushrooms here in my part of the South of England - I think possibly because of unusually low rainfall throughout the summer - anyway, I headed out to see what I could find and I didn't return completely empty-handed - this gave me the opportunity to try a recipe for mock scampi (which usually means breaded langoustine tails)

The New Forest Park Authority put up signs *implying* that it was banned - and indeed many people took this to mean there was a ban - leading to cases where foragers were confronted by members of the public and (reportedly) Forest Rangers. It's misinformation. There is no ban on foraging for personal use.       Nice one. Foraging (and hunting) is one of the most liberating thing a city dweller can do. The only thing you really have to worry about are ticks. Use some DEET and tuck your trousers into you wellies. 👍

      @Richard Millican yeah, part of me wants to say maybe they just had an attack of over-enthusiasm, or they published information that they also intended to pursue in making into law, but I think if either of those had been the case, there would have been some kind of clarifying statement later - it doesn't seem there is.
      They published misinformation on purpose, and with (I think) the intent to make the public (both well-meaning concerned individuals and also busybodies) part of the 'enforcement' of this nonexistent law.

    I am on meal replacement milkshakes because of stomach issues. I don’t eat solid food anymore and it’s ruining my life. Life without eating (it’s been months) totally makes life not worth living. Videos like this enable me to enjoy the food and experience it without making myself puke and feel awful all day. You will never understand how your cooking videos give me something to hold onto.

      I too have issues with stomach, I was considering a liquid diet, Ensure or home made, Im not sure which one yet maybe both. I hope your issues clear as I do mine.. one day x

      Actually no. The Tylopilus felleus is so bitter that even a small piece of it makes you spit it out instantly. Its not poisonous though, so i always let beginners try it.

    After a challenging day, a lovely atomic shrimp video is just what I need to unwind. I hope Eva gets extra toast tax in recognition of her bravery staying home keeping the deer safe.       @@PLANDerLinde99 no, the actual danger is that thr deer could startle, even though its small and the makes could get defensive leading to them being dangerous both to themselves by getting caught on fences, wall ect and us, by them charging

    Have you ever tried to make a full, substantial meal with strictly foraged ingredients only? If not then it would be an interesting video to watch and a potential challenge idea. Great content as always Shrimp!

    I've always loved properly done breaded mushrooms. Its just a shame that these days so often when you find them in cafes and restaurants they are those frozen breaded button mushrooms that are OK but full of airspace and not very "mushroomy".

      @@SyntaxErr19287 Can't beat a good ol greasy spoon style cafe. Just a shame they are getting harder and harder to find. Even harder to find a good one at that. The amount I have been to that don't even offer black pudding is almost offensive haha

    Musings from a forester. The tree tubes serve a few purposes: 1. Prevents grazing at the pivotal stage of establishment. and 2. Helps to encourage the tree to grow straight up rather than spread out. In some places, tree tubes are being shied away from mainly for the reason you described, the end up falling over and becoming trash. They can also make the trunk a bit weak as it is not subject to the wind and can be a little wobbly, hence the need for staking. Cages around the tree are the most modern options that some places are choosing to adopt now.

      I've heard about celeriac wrapped in nori and then breaded and fried being used as vegan "fish", you could try it out. I'm sometimes cooking with but without the nori and it's a nice dish even as it is.

    Have you ever found any more "funky" mushrooms? In New Zealand, where I live, there are many native species of psychedelic mushrooms and the government quite funnily tries to destroy all of them to prevent people from eating them, but nature as expected, always finds a way. I would be interested to know your stance on the still-edible-but-not-really-a-meal mushrooms.

    I didn't watch this video at the time because I knew I'd want to save it for a time when I needed something slow and soothing, and tonight was that night. So grateful to you for making this kind of calm, nature based content. During daylight hours if I was this stressed I'd try to get out for a walk in a local park but that's really difficult with the long nights drawing in, so being able to focus on your foraging walk was just so perfect.     I love how you're not put off by natural "pests" and things coming into contact with your food. I think more and more people are conditioned into eating overly sterilised foods covered in plastic packaging and won't touch anything directly from the ground or tree. I've made crumbed mushrooms before but not in this "seafood" style. I'll have to give it a try.

      Just a sidenote some Ppl actually develop some immune diseases or gastrointestinal diseases due to growing up in an overly sterilized environment. We are evolved with several species of parasites and actually develop some symbiosis relationship with them.

    This made me so nostalgic for my childhood in rural Vermont. My two younger sisters and I had hundreds of acres of woods as our back yard and mushrooms were everywhere. Finding a fairy ring was always our goal in the autumn!
    Also, you've made me realize that I need to learn what edible things are growing in my area because there might be a day when this knowledge is necessary and not just trivia.

    As someone who is a mostly "meat and potatoes" kind of guy I do really enjoy these videos where non-animal products are the star of the show. About everything is something I give a go at least. It always inspires me to try something different and from scratch rather than resulting to the usual stuff that's processed or ordered to the door. About the only thing I'd change would be to include the chips afterwards into the oil (perhaps adding a tad bit more for a "deep fry") other than that I'd only be disappointed that there wasn't enough for a second helping but then again what is for desert? Another great educational and entertaining video thanks a third time!

      It's always surreal being in managed woodland. It's like you're in an open space but you're also secluded and enclosed at the same time. Depending on the topography, you could see someone hundreds of metres away, but have no idea they were there due to the silence of the place. Sadly these kinds of forests aren't very dense with wildlife due to the fact that they don't have the undergrowth layer he mentioned.

    Great video , who dosent like a good ramble thru the woods. I've found the penny bun / porchini a few special times too. The flavour is so fine and delicate I wouldn't deep fry them or cover with other flavours . Definitely consider eating the stalks too, unlike other mushrooms the eddulus has a tender and tasty stem , big love

    I make this ALL of the time using oyster mushrooms, Cajun fish fry and nori furkaki. Its one of my favorite things.

    I've had breaded mushrooms before, but it never occurred to me to make my own. Think I'll have to knock up a batch with a chilli - or even Indian spice - coating. And dips!

    As a kid I always loved scampi, but I never knew it was shrimp! You learn something new every day.

    I used to live on the edge of a town. It wasn't a bad district, we had a lot of stores and everything, but it was 2 minutes away from nature. I could take a walk in a really small but moody forest, or go the other way and be at the riverbank in 10 minutes. Now I live in the middle of Budapest, and I miss nature and foraging

    Reminds me of going to the Bernie Inn in my childhood. Breaded garlic mushroom starter. Back when half a grapefruit, melon, and orange juice were considered starters. Avocado with prawns was very bourgeois.

    I've heard that monkfish was sometimes used for fake scampi (in the "olden days" - '70s - '80s) and judging from some of the stuff I was served as "pub scampi" (back in the day) I believe it!

    Growing up near a small forest, it was easy to learn all mushroom varieties, of which there was just a handful. No surprises. No new species. Just 2 kinds that are poisonous, and they stand out. The rest was all good to eat. Lots of mushroom soup ever summer. One food that produced itself, was healthy and free. But I would never take a change. Good point that 99% sure isn't good enough. That's the best rule of foraging.

    Oh wow, I go to the New Forest often, but I never really thought of foraging there. This is very inspiring, makes me want to head right back there and try it for myself!

    Deep fried battered mushrooms are one of favourite things in the world, going right back to before I stopped eating meat even. We had a local fish'n'chip shop that had them as a regular menu item. So good! I would have them rather than fish. Those were the days.

    As a Florida native it hurts to hear Mike talk about the fried shrimp he's used to. The shrimp we can buy from local shrimpers our of the cooler in their pickup truck is amazing. Caught just a few hrs before and big and meaty.

      Here in the UK, Prawns and Shrimp are two distinct arthropods. Prawns are large, Shrimp are small. Most people here eat Prawns, as they are more numerous than Shrimp. I prefer brown Shrimp, as they are smaller, sweeter, and in every way, more flavourful than Prawns. The seafood known as 'Scampi', are usually Langoustines, or 'Dublin Bay Prawn', yet another type of arthropoda. We also have Crayfish (Crawfish; 'Mudbugs'), which are delicious too.

    I adore your foraging and cooking foraged food videos! It's something I've always dreamed of doing as a kid, ever since I read a book called My Side of the Mountain. I've been held back from doing it in person thanks to a slew of medical issues, and it's tough to navigate through rougher terrain in my wheelchair, but I absolutely love living vicariously through you!

    Scampi in America is usually shrimp sauteed in butter with garlic, I think. Like at red lobster, if you want a reference on their website.
    Fried shrimp is just fried shrimp here, usually battered and deep fried.
