- You’re in for a real treat with this Cincinnati Style Chili recipe, it’s really hard to beat. I love Texas chili, but this Cincinnati chili is unique in its own way, some of the untraditional ingredients in this chili takes it to a whole new level. It’s been a few years since I tasted Skyline chili for the first time, and since then I have come up with my own copycat recipe and I give it an A+. I’m sure you will love it if you give it a try. ❤️

5 WAYS------------------------------
1. CHILI
2. SPAGHETTI AND CHILI
3. SPAGHETTI, CHILI AND CHEESE
4. SPAGHETTI, CHILI, BEANS OR ONIONS AND CHEESE
5. SPAGHETTI, CHILI, ONIONS, BEANS AND CHEESE
INGREDIENTS----------
5 C. Water
2 lbs. 85/15 ground Chuck
2 C. Finely chopped yellow Onions
3 large crushed garlic cloves
3 tsp Tomato paste
2 8oz. Cans Tomato sauce
3/4 tsp Apple cider vinegar
2 tsp Worcestershire sauce
Pepper as needed
Salt as needed
1/2 tsp ground Allspice
1/2 tsp ground Cloves
1 large Bay leaf
1 tsp Ground Cumin
1/2 tsp Cayenne pepper (optional)
1 oz. Freshly grated Unsweetened Chocolate
1/8 tsp ground Nutmeg
2 tsp Ground cinnamon (add last)
1 tsp Onion powder
1 tsp Garlic powder
3 Tbsp Chili powder (try Gebhardt's chili powder if you don't have homemade)
1 tsp Paprika
OTHER INGREDIENTS AND TOPPERS------
Cooked Spaghetti (as needed)
Freshly grated Mild Cheddar Cheese (as needed)
Chopped Onions (as needed)
Red Kidney Beans (as needed)
Oyster Crackers (as needed)
Hot Sauce (optional)

OMGoodness! I grew up spending Summers with my Grandmother (mi Abuela) in Dayton, Ohio, so I've had Skyline all my life, ALL 5 ways many times, so I can appreciate this chili as much as yourself. I never knew, and didn't know why until today, to even think of making it at home! This recipe is like "food gold" to me, and I CAN NOT stress enough how much I appreciate you sharing it here!! Born & raised in Cincinnati. Love this chili!!! Cincinnati chili is NOT your average "bowl of red" style chili. This style of chili was first served at the Empress Chili Parlor over 100 years ago by two greek brothers. Thanks for sharing this great authentic recipe. Looking forward to serving it to my family. I finally made the Cincinnati Chili yesterday for dinner. Everyone in the family enjoyed it and ask for seconds! The spices that were added to this dish are spot-on. They made the chili unique tasting and yummy! I have never added dark unsweetened chocolate to chili before yesterday, but you are correct it was delicious! The chocolate add a rich depthness to the recipe. Thank you, Rachel, for another winning recipe!!
I was born in Cincinnati and, lived outside of Cincinnati and, we even knew a guy that was a owner of our neighborhood Empress yrs ago, they add unseeded red chili peppers and, they used cocoa powder and Skyline adds a 8oz chocolate bar to their typical serving size per batch! I had a family friend that worked there and told us this! Most people tend to believe there’s no chocolate in Cincinnati Style Chili but, that’s what gives it’s unique taste! Also, Skyline uses cinnamon! Each chain has it’s own recipe and, each recipe in the cookbook s are different! I got a recipe yrs ago out of a microwave cookbook that used to come along with your microwave when you would purchase one and in that cookbook is a recipe for homemade skyline, it does call for chocolate and, it calls for pumpkin pie spice, chili powder, it does not call for cloves or allspice. It calls for 1/3 cup of Worcestershire sauce, 1/2c. of beef broth, I can’t handle the strong beef flavor so, I use chicken broth and, it calls for a 1Tbs of white vinegar!
Rachel, thank you for another wonderful recipe. I've lived my entire 73 years in the Greater Cincinnati area and grew up eating Cincinnati Chili. Cincinnati Chili is also known as Greek Style Chili, it's also known as Cinnamon Based Chili. I have collected and cooked a number of Cincinnati Chili Recipes and your's is among the best. I cooked it tonight and planned on serving it for tomorrow night's dinner. It smelled so good cooking I had it for tonight's dinner! Cincinnati style chili also goes great with hot dogs, place hot dog in bun, cover with chili, top with mustard, onions and cheese which is called a "cheese coney."

Finally I have found my mother's recipe. Thank you so much. I am from Miamisburg Ohio just up the road from Cinci. She had it a church cookbook that I did not snag that had a two-page recipe in this was it. Can't wait to make it.

We made this recipe last night and it was FANTASTIC. Even went the extra mile and got the oyster crackers and York Peppermint Patties for dessert.

I grew up in Springfield, Ohio. My Grandparents on both sides lived in Cincinnati. Every year for Thanksgiving and Christmas, my parents would load us up in the car and we would head to our Grandparents house. We would always stop on the way and pick up either Cincinnati chili or White Castles. The chili was always my favorite! There are so many different Cincinnati chili restaurants in Cincinnati. There’s Skyline, Gold Star, Emperess, Camp Washington, etc. My favorite was always Skyline! My Dad used to always make it from scratch like you did and I’ve made it myself. It is delicious and always reminds mope of my childhood!!!❤❤❤

The Blue Ash Chili Parlor in Blue Ash, Ohio won the Terlingua Chili Cookoff 80's or 90s? Had the chili and it was really good but different from Texas chili. But I love Chili and Spaghetti.
Worked night shift one year and we would stop at Kip's Restaurant in Dallas, the only non breakfast item was Chili and Spaghetti. ha ha Haven't thought about that for years.

I lived in Cincinnati for 42 years before we moved to Florida. Skyline is sooooooo good! You did a great job! Thankfully we can buy it buy here in Florida. We miss eating it in the restaurant. The skyline restaurants aren’t the same here.

There were two originators of Cincinnati Style chili. Dixie Chili in Northern Kentucky is where it all started. There were two original recipe owners and they split and one stayed in Northern KY and the other went into Cincinnati, so as not to compete with on another. Dixie Chili had to close most of their restaurants in 2008. They now have two open, one in Newport, KY and one in Erlanger, KY.

@@rachelcookswithlove Thank you for your reply, Rachel. I've never been to Ohio (born and raised in So Cal, and now living in Las Vegas), but I love Cincinnati Chili! I've tried a couple different recipes, but the spice blend (ratio?) just wasn't quite right for my taste. I've been on the lookout for another variation, and yours sounds like it just may be what I'm looking for.
I always add the ground beef to cold water and whisk it with a fork to break up the clumps as it is coming to a boil. If you add it to boiling water the meat tends to “clump up” and is harder to make into that smooth consistency you are looking for.

I grew up across the river on the Kentucky side Have a love the Cincinnati chili line is great but on the Kentucky side my favorite is Dixie the Dixie goat that was the crystal but now it's the Dixie and every time we go back we'll always stop

In Winnipeg, there’s a Greek diner/ drive in that’s been around for 60 plus years. Their chili is very similar to what’s depicted here. They serve their chili on spaghetti and plunk two of their grilled hamburger patties on top. I order that for breakfast there on Sunday morning. I may see if they can add some shredded cheese to it next time. They do serve it with grated Parmesan but that cheese is out of place on this dish, so I avoid it.

Love your recipes..but can't do the onions ..if your like me ,onion powder because the flavor I like but not the texture..so you can omit the onions ,or use onion powder and still taste great 😁..by the way the cinnamon is a choice.
