If I'm applying to a language course visa in Germany, can I get a public health insurance or just a private one? (I'm 34 years old)

Private insurance would be cheaper option for you. They don’t allow public insurance for students over 30

Switching to Private is easy and yes you can opt for private for a semester.
You can switch back to Public once you find a full time employment, it is pretty easy and your employer can also apply for you. For student, check out Mawista insurance, they also offer insurance during your job seeking time
