    I wasn't happy with what the tomato sauce did when I cook chili in a cast iron Dutch oven. Had to strip it back down and re season.

    Ok I followed directions you gave on new cast iron skillets on washing and seasoning them, i added bacon grease to ot fried my bacon and why didnit stick ? And left a residue is that normal or what I am new to this first time.

      Yes, bacon has sugar in it, so when you fry it, there will be some stuck to the skillet, but it’s easy to clean up!

    I think chef Paul or it might of been Justin Wilson had said not to cook beans in cast iron. Not sure if that was creole thing, or just superstition or if there was real science behind that or not.

    Hi! Me and my family have a cast iron skillet that is supposedly very rare?? It’s the 10 1/2 inch Statue of Liberty cast iron skillet.. we have searched all online to find a price for it but have had no luck! Do you know anything about this? Thank you

      Hello! Great question! I believe Lodge made these for Cracker Barrel around 2012-2013. I'm not sure about the price. Do you want to sell it, or just curious about its worth?

    only thing i wont do is leave foods high in acid level for a long periods of time, rather it be in the freeze or fridge, just the fact it would most likely break the seasoning down and make a crude style battery in doing so, but that is my opinion.

      It’s ok, too! I cook tomatoes and tomato sauce all the time with no problems!

      Wrrrrong, just don't leave it soaking for hours. A lil touch up takes care of that if we have well seasoned iron.

      It's actually great for cooking the water out and making it thicker. It's one of the few times I'll look for a skillet that has some buildup (seasoning). I think it's time that leads to leaching out the iron flavor.

      I just watched a YT video where the guy fixes his skillet by cooking 3 cans of tomatoes for 25 minutes thus removing all of the chipping "seasoning". Unbelievable to me, once he got the pan bare, he did 2 or 3 avocado oil coats on the stovetop, one in the 450 oven for an hour, 2 or 3 more on the stovetop and another in the oven. I'd say what you can cook in cast iron depends on how skillful you are with cast iron.

      Well, I haven’t done fudge, but brownies work very well in cast iron, so I don’t see why you couldn’t make fudge.

      I don’t know about tasting like metal, but it will taste like the oil you seasoned it with. I put parchment paper in mine, which seems to eliminate that problem, though!
