    Restaurant tip for big rolls of paper/plastic wrap: Put the roll on a cutting board and use a paring knife. Pull out paper, put meat on paper, zip knife down board, wrap meat, repeat. 👍

    Just found you channel. It's awesome. I grew up on a farm. In the summer we truck farm and lived on the river trot lining. Winter in the woods for deer season. I remember big hunt day. Family from every where came in. We butcher 2 to 4 deer and 2 hogs. Process everything as a family.my dad had a smoke house they put meat in and smoke till Christmas. My grandma would make baseball out of pig hide and stuff plus crackling. Lard was laid out to make soap. We were sent to forge certain flowers and leaf to mix in soap. Miss those times. I know hard work but worth it to feed so many families. Does anyone help your parents process there meat since they are older. Great video.

      Thanks. My parents still do a good job at processing, hunting is getting harder though for them. It isn’t easy to haul a 120 leg of moose out of the woods.

    Hello Sir Mark, I've been watching you & wife process the moose 🍖, wow that's alot of meat for a half of moose,awesome job of cleaning up the meat making burger meat, sausage and steaks, I've never had moose meat, anxious to try it some day in the future, I very done all the same processing of venison meats, squirrel, flemmish giants rabbits 🐇 of course I done all of this with parents in the past, I've even done it myself after my father passed away on the ranch, it's a lot of time to prepare process & packaging the meats, but it's worth the effort & of course the taste of fresh meat you bagged for the season!       Thanks Jim! Having a freezer full of great healthy food is a great feeling. We had a nice moose pot roast last night and are having moose steaks tonight.

    Mark, my Husband and I are cooks so we just loved the tutorial. In Central Illinois they do Farm to Table. They actually Bus people in from Chicago. A place called Slaegel Farm. They go through butchering process. A hired Chef cooks a meal from Meat and local veggies and they eat together at a big Farmhouse Table. I can't wait to you have a Smoking Video. I have been eyeing your Traeger, my Husband is disabled, he loves to watch me cook. I told him let's start Smoking. Thanks

    Your family is well oiled machine in perfect unison. Thank you for sharing this very interesting video also I realized that this meat is heavy & you back packing it out must of been hard. How come when you get out of your plane see & shoot the moose right there I guess that would be to easy 😁

      I wish I’d be that easy to shoot it from the plane. The local laws restrict hunting for big game the same day you’ve been airborne, so usually the animals have moved off to another spot by the time you get out hunting the next day.

    Ma4k please watch the kids don't forget and push the meat into grinder with there fingers. I had a class mate when I was 7 who done that it was so sad. . We have cut our meat all our life. Pigs elk deer beef chickens grew our own potatoes . So u might say we was meat and potatoes people lol.

    I grew up helping mom and dad butchering hogs and chickens. Dad killed the hogs, mom the chickens. We all knew where the meat came from, they grew up right in front of us. We did not learn that all animals are like humans in fur suits or feathers. We saw the animals being bred, born and eventually killed and butchered, and then cooked.

      It’s a shame more people don’t have a connection to their food and realize where it really comes from. It’s such a disconnect for many people who have never experienced like you have.

    Great video on the cost of "free" meat....smile. Wow, loads of work but you can't get this quality at the supermarket. Like the way the family pitches in and works like a team.
    Are you allowed only one moose per year and do you have to have a special stamp or permit for it?

      The limit is one moose per year per person, but there are also lots of regulations on the size of the moose and season timing. The regs are geographically based and can be a bit overwhelming for new hunters.
      Our family only needs one moose, plus it’s so much work once you pull the trigger. Thankfully we get the whole family involved. It’s good for kids to know where their food comes from.

    Great hunt, special time with Dad and family processing of moose. Just curious on your burger, I don’t see you added any additional fat, doesn’t that lend to a very lean meat? Peace.

      We choose to not add any fat when we grind. For most of our cooking with ground moose we just don’t feel it’s necessary to have a bunch of beef or pork fat mixed in. For example, making taco meat or spaghetti with it doesn’t need any extra fat. The exception is when we make burgers, and then we add a bit of coconut oil or bacon fat to help the burgers stick together and to be a bit more juicy.

    Have you guys ever throw those huge bones on the fire for about 15 minutes and then scoop out the bone marrows on top of the moose steaks?

      That sounds like a great idea to try! We’ve baked and boiled them to make bone broth. I was too busy this year and I gave them to a friend to use after we were done butchering.

      My recommendation is to start making friends on base, there are lots of great hunters that I’ve meet over the years who are stationed up in Alaska. The last few years I’ve moved into a phase of mostly just hunting with my family (boys, dad, and brothers-in-law) as my times limited we like to spend it with family.     Wow doesn't it go off when you hang them?
    Does anyone who lives in Alaska are they permitted to kill a 1 Moose per year? Never tried Moose Meat Before? Does it taste of Pork or Beef or maybe Chicken??
    What about the Heart and inside organs? How long can you keep Moose Meat in your frezzer?freezer? Good teaching where food comes from.

      If packaged well, it stays well for 18 months or so. We usually eat it all within 12-13 months.

Or is it up to the family needing to get a license to hunting Moose and fish? I'm sorry everytime I write another question pops into head. How much is a license in Alaska?

    Thanks for sharing. Ive been thinking of going for moose this year but after seeing all the work you go thru, I'm not so sure, lol. How many lbs of meat (approx) do you usually get? Cheers from Saskatchewan

      Probably 400 lbs for a mature moose.

      No, as long as you keep the meat clean from the field and on the way home to processing it, there is not need to wash it. You actually don't want to get it extra wet and try to keep it dry as long as you are keeping it clean.

      There are limits on all the animals, with more strict limits the closer you are to the road system and larger towns. The State has biologists that monitor the herd strength of each species and set limits accordingly.

      Interesting, I’ll agree that we are not professionals, but none of our meat gets freezer burnt and it works well for us. Been doing it this way for 15 years or so.
      What do you recommend we do different?
