Don't know what it is about hot dogs but Koreans somehow manage to work them into everything.

He's done quite a few cooking feature episodes now, and food was a pretty big part of the Japan trip. It doesn't make sense to me that he'd do all this if it wasn't something he enjoyed, or he wasn't sure about it enough to wing it for all these substitution recipes. When I was in Japan recently, I visited a shop called Tako Taco -- yes, octopus tacos. Except the "tortillas" were made of rice, and were predictably tasteless. The octopus was cooked takoyaki style. Other than the rice cake vibes of the shell, it wasn't bad.
one of the most challenging conversations I've ever had with the japanese half of my family is trying to explain to them the concept of a mexican taco, when "tako" means octopus in japanese (my family is from okinawa, so Mexican food isn't really a thing there). the taco takoyaki reminded me of that and cracked me up really bad

6:46 should add tenkasu (tenpura batter scraps) and shredded cabbage for that crunch, your ball forming technique is also good what I do for my batter is make it watery, and fill up the entire pan because the deepness of the pan is exact for baking the balls. some pans have scour lines between the round sections so you can divide each section with your takoyaki skewer and then form the almost cooked batter. it's good to preheat the pan, watch for smoke then pour the batter you should try okonomiyaki too Mr. William, whether you make a video or do it off camera, it's a very flexible dish, it's like a pancake with meat and vegetables, the name means "grilled however you like" so you can use any toppings or fillings for the batter. takoyaki sauce/tonkatsu sauce/okonomiyaki sauce/yakisoba sauce are all just variation of the same tangy, sweet, savory sauce. the reason why it reminds you of worcestershire sauce is because it contains worcestershire sauce, ketchup, sugar, and the standard japanese sauce called mentsuyu, which is soy sauce, mirin (sweetened cooking wine made with rice) and sake, which is traditionally used in many broths, soups, and sauces. you can make many variations of it, some can differ, or make your own that suits your tastes your american version looks great ! I'd like to try it sometimes, with onions and relish the taco one it would be great if you could get to use the taco shell, or tortilla chips as a substitute for tenkasu for a crunchy bite, then use melted cheese and salsa for the sauce toppings, should add onions too
