Raw milk: Idaho ranchers on why not to pasteurize

  • Before the advent of pasteurization, all milk was raw milk. There were also a lot more food-related illnesses. Universal pasteurization was introduced in the U.S. around the same time of rapid urbanization as a way to help control bacterial diseases.
One might think this would be the end of the story, but there's a very devoted group of people who believe that pasteurized milk is "dead milk" and are fighting to make it easier to buy the raw stuff (aka "real milk").
In 1987 the FDA banned interstate shipping of raw milk and today its retail sale is only legal in dozen or so states. Raw milk has such a following that people form secret clubs or buy portions of a cow in order to circumvent state laws regulating its sale.
In March of 2010, Idaho made things just a bit easier for producers of raw milk. A small-herd exemption was passed that allowed farmers with 7 or fewer goats or sheep and 3 or fewer cows to produce raw milk or raw milk products for human consumption.
Critics argue that raw milk is linked to diseases and deaths from bacteria like E. Coli. Proponents argue that there are other ways, besides pasteurization, to test milk (The Idaho small-herd exemption requires tests for diseases like Tuberculosis and Brucellosis).
In this video, the folks at Bellevue Idaho's Cottonwood Ranch milk their small herd and explain why they think that pasteurization "spoils the taste" and "changes the contents into stuff that you may or may not be able to use." Or as 30-year-old Eric Barney explains, why "the bought milk" tastes like "cardboard cow".

Same, we are 15 minutes from city borders but there are still houses everywhere side by side but are yards are big here in texas. Iv already gotten chickens and im buying Nigerian dwarf buck and a alpine doe in a few weeks on pickup date. Converting a whole manufactured home as a barn for chickens and goats and the kitchen as a milking parlour :) we do have are own home on the same lot and a fair bit of land for them to roam. about 10k-15k square feet and we have a small open pasture right next door and it has its own horse shelter on it that i want to buy. Or just straight up move even further out but this next option would prolly be cheeper xD

    @ John Wilson,
Many people that are supposedly "lactose intolerant" are actually pasteurization intolerant, as the important enzymes are cooked out of it. I've see a few people myself, (including me) that stopped using pasteurized dairy and actually started using dairy products again when switching to raw dairy, including cheeses, etc...
Refrigeration and improved hygiene has had a greater impact on improved food safety than any individual has, including Pasteur.
People can be allergic to the milk protein casein particularly from pasteurized milk which has it's enzymes cooked out of it.

The main reason milk in the store has to be pasteurised, sterilised and homogenised is because one bottle of milk can contain milk from more than a 1000 sick animals that live in horrible conditions. Nothing dangerous with raw milk if you can get it from a farm like this.

    • @TELEVISIONARCHIVES

NO. Raw milk can contain a variety of disease-causing pathogens, as demonstrated by numerous scientific studies. Everything these guys are saying is true. Raw milk tastes so much better than pasteurized, homogenized milk, keeps longer and can actually make cheese. People don't realize that you need unhomogenized milk to make cheese.
What you get with homogenized, pasteurized milk is basically a dead product that you need to drink more of to see a benefit...exactly the product a large dairy company would want a monopoly on.
In order to get raw milk in Texas, I have to drive 40 minutes both ways and pay $8 - $10 a gallon. I don't have the time or money for that. Raw milk is treated like cocaine in even the most free state in the USA...let that sink and then tell me we're living in a free country and explain to me what my grandad fought for in WW2.

I've always been kinda interested in doing a small farm; for only myself sometime in the future. And if that's all there is to straining the milk than I don't know why I thought it was such a complicated process in the first place. I though I had to use cheese cloth and stuff. But that's so simple. Raw milk, here I come. Now. Should I do cows or goats? that is the question.

    • @horsehelping
      @horsehelping 7 років тому +7

Its actually pretty easy to handling the milk. I would use a cheese cloth, paper towels, unbleached coffee filter or some sort of filter, more than just the reusable coffee filter.....that is a handy holder though & easy to disinfect. The most "difficult" part of the milking process is to get your animal to cooperate, when they get tired of standing there waiting for you to finish....they will let you know. So, whether you get a goat or cow, use a smaller container to milk into & then a bigger one set off to the side to pour into it, otherwise you might have a hoof that either goes into your container that your milking into or they'll kick it out of the way :)
Depending on your experience with livestock (if you've owned any previously or not) & whether or not its just you or you have a family (kids, spouse),will depend on what you should own. Goat's will give up to a gallon a day (depending on the breed) where as a cow (also generally depending on the breed) can give between 3-5 gallons (sometimes more) a day. So, if its just you....I'd go for a goat. But you can also make lots of ice cream, cheese, yogurt, sour cream, cottage cheese, etc. with the excess or if you have other animals...feed it to them :)

Until very recently in human history, very few adults could even digest milk. Milk was processed by different kinds of microbes to make it digestible, and to keep you from getting sick if it became contaminated. Unpasteurized milk is a problem when milk must be transported and packaged for use in urban areas, far from the farm.
Pasteurization is essentially cooking the milk. I have seen nothing that convinces me that pasteurization makes the milk of a cow less nutritious to a human.
I also see nothing that says milk harvested in sanitary conditions, and properly handled, is in any way more dangerous than raw meat (for example). I have milked enough cows over the years (by hand and by machine), and drank enough milk (pasteurized and not) to think that either way is fine.
So I can understand the need to have controls on milk based on methods of distribution (dozens of farmers selling to multiple processors, with thousands of customers). I also think that milk being sold by the farmer, directly to the consumer, is of such low risk that it should be allowed with little interference.
From my point of view there is no need for any further justification than "that is the way I like it".

Al Lipscomb There's plenty of research showing how pasteurization destroys the enzymes and vitamins in milk; and how it negatively affects absorption and utilization of calcium to the detriment of bones and teeth, and how it affects cholesterol, if you look for it. Check out a book entitled "Enzyme Nutrition; the research of Royal Lee; Pottingers Cats. And go from there.

There is so much data out there saying how pasteurization corrupts the protein profiles and kills all the good bacteria in the milk. Raw milk also contains lactase which is an enzyme needed to break down lactose. You really need to open your mind and understand that the FDA is NOT your friend. Baby Boomers have been played for fools for decades. Circumcision, pasteurized milk, anti-depressants, birth control, ALL CORRUPTIONS AND POISONS.

I have a question in regard to cooking with raw milk-Does cooking with raw dairy products such as milk, cream, cheese, yoghurt, butter, etc. negate the health value of those dairy products in their raw form? I wanted to start using raw dairy in baking and cooking recipes, but I am confused as to whether the raw dairy getting cooked in the oven or on the stove would mean that it is no longer considered raw & beneficial to our health. In other words, by cooking with raw dairy are we effectively pasteurizing it? Does anyone have advice for this?

I am searching for audio bites from farmers speaking about Raw Milk and their opinions on it as a product and nourishment vs Pasteurized milk. Would you allow me to use a clip of your video, with your channel and video tagged within my video and description as credit? It would help me greatly in spreading the good and ancient truth about Raw Milk! If you have any questions about the use of any respective clips feel free to reach back out.

When did we start pasturizing and why?

as she mentions in the video, a city distribution system where all the milk from 1000 or more cows in unsafe filthy conditions gets mixed together then bottled for sale can be quite problematic left raw, long transport times, rogue bacteria and the history of tainted milk being covered up with borax and other toxic alkalis, spreading bovine tuberculosis which killed countless people in the past. getting fresh milk from a single healthy cow in the countryside is a different situation entirely

Having worked at an actual retail milk farm I can also tell you that your didn't see puss and blood from a cows udder that's been injured from overuse.
